  • Made with Mochiko / glutinous rice flour, these brownies are uniquely chewy and tasty with an all-around crispy crust. They are also gluten-free! In case you wonder, glutinous rice flour contains no gluten and its misleading name actually refers to its sticky nature once cooked.

    *1 cup = 240 ml
    Ingredients: (12 brownies)
    130 g (packed ½ cup + 1 tbsp) dark brown sugar
    160 g (1 cup) Mochiko brand flour / glutinous (sweet) rice flour
    1 tsp baking powder
    15 g (2 tbsp) cocoa powder
    1/4 tsp salt
    1/2 tsp instant coffee
    30 g (2 tbsp) butter, melted
    200 ml (¾ cup + 4 tsp) whole milk
    1 large egg
    55 g (¼ cup) dark chocolate chips
    __________________________________________________________________________

    130 g dark brown sugar
    160 g tepung merek Mochiko / tepung ketan putih
    1 sdt bubuk pengembang

    Made this yesterday and they were so good. Loved the mochi texture. And i mixed it without using a mixer, turned out great. But i topped it with chocolate chips after the surface cooked a bit so it won't sink. Thanks for the recipe.

    Tried this recipe. I added 30g of melted chocolate and more chocolate chips. Plus 1 teaspoon of tapioca starch. Also baked for 26 minutes instead of 40 minutes. They were perfectly soft and chewy which is just how I liked it. Thank you for the wonderful recipe ❤

    This was delicious and the texture was lovely, but I’d recommend adding more chocolate and sugar if you like things more chocolatey!

    Just made some with this recipe and it turned out better than expected. I substituted the the Whole milk with Alpro Almond milk and it was still pretty good. Also, I like that this recipe is not heavy on the amount of butter and very forgiving with the proportions. Thank you for sharing this recipe^^

      @@janisandriella I followed instructions to a T and they were yummy. Do note that it will be a lot thinner because the square pan is bigger so maybe double the recipe

    Note to self: let the milk rest or be room temperature otherwise the melted butter will harden (yes, that's what happened to mine). Other than that, it was good! Thank you for this simple recipe!

      Yeah they are super tasty. I used whole milk that is basically not skim milk or not low-fat. But I think this recipe will work with any kind of milk. So give it a try with whatever milk is available.

      Hi, I would replace with non-dairy milk like coconut milk (not coconut cream) or soy milk.

      Thank you! The choco chip won't sink if the batter is thick. I'd mix the batter just enough, just until combined, so it didn't get too thin. Another viewer suggested adding the choco chips halfway through the baking, if that helps :)

    Hello! These look delicious. Do these stay soft after 1 day or will it turn rock hard ? I want to know how to store them since i cant finish the whole batch in 1 day.

      Hi! I stored them in a closed container and on a counter. The crust will become softer after 1 day. If you like it soft without crispy crust, I suggest baking them 5-10 minutes shorter. But if you like the crust, simply reheat them with a toaster or oven on the next day :)

      Hi, sorry the baking powder is activated when it hits any liquid, so it needs to bake right away for the brownies to rise properly.

    Wow I made these the other day and they came out so chewy and warm 🥰 I think mine cooked after only 15 mins but top wasn't that crispy, should I keep baking even though they are cooked? I don't wanna over-bake it. Thank you for such easy yet amazing recipe!

      Hi, I am glad you like them :) If you want the crust, definitely bake longer until the top crust is formed. It’s crispy when baked fresh out of the oven, but the crust will turn chewy overtime. So make sure to reheat before eating these.

    i don't have a muffin tin, so can i use a regular square one instead? will it affect the baking time?

      Yes can use square baking pan but bake until there is a crust forming on top and the sides. Can test doneness with a toothpick inserted in the center. If it comes out clean or with just a little crumble, it is cooked.

    Will it be harden if I store them in a fridge? How long is it last at room temperature?

      If you store them in a fridge, simply reheat with oven, toaster or microwave. The inside will still be chewy. I kept mine at room temperature up to 5 days.

      Iya seharusnya bisa pakai tepung ketan rose brand. Aku pakai tepung ketan dr Thai dan hasilnya oke. Kematangannya dr timing ya. Boleh mulai dicek waktu menit ke-35. Kalau atasannya masi soft, lanjutin panggang sampai crust nya terbentuk. Happy baking :)

      I reheated them with a toaster, partially wrapped with aluminium foil, and they were still chewy inside and crispy on the crust. Can also reheat with microwave or oven.

    Hii nice recipe!! I am so tempted to try but can you please provide the amount of the ingredients in baking measuring cups?? For example 1 cup of rice flour, 2 tsp of cocoa powder, etc... Cuz I don't have a kitchen scale :(( Just a favor thankss

    I tried making this but the middle always sinks in and the chocolate chips sink in with it... what am I doing wrong?
    Is there a difference if I use Mochiko flour or glutinous rice flour? Are you using mini muffin tray or regular size?

      Either flour should work and I used regular size muffin tray. Did you weigh the ingredients or use volume measurement? Perhaps the batter was too thin that the chocolate chips sink..

      Halo, mgkn nge-mix nya terlalu lama jadinya ada bubble di dalam adonan dan wkt dipanggang bubble nya keluar. Sy cm nge-mix sampe adonan nya rata, dan kocoknya yg pelan aja supaya ga ada bubble. Telurnya room temp. Tp sy pake susu segar, jd yg dingin dr kulkas.

    Udah nyobain tadi, rasanya enakk manisnya pas, dapet kenyolnya juga.
    Tapi sayangnya ga bisa daper crunchy crustnya. Kira2 krn apa ya?
    - saya bikinnya hanya 10 cups, jadi per cup isinya lbh banyak
    - saya tuang wet ingredients ke dry
    - saya lapisin loyangnya pake minyak goreng
    Kalo dari apa yg saya lakuin tadi, kira2 saya salah dimana ya kok ga dapet crustnya?
    Btw, oven saya oven tua, jadi kayaknya tadi pas 40mnt masih blm matang banget. Saya tambahin lagi 10 menit 2x, total memanggang 60mnt.

      Halo :) coba tambahin wkt manggangnya ya. Saya jg perna underbake dan hasilnya ga crunchy, meskipun isinya uda kenyal dan enak. Isinya kamu kan lbh byk dan mgkn bener oven kita beda. Jadi coba panggang lbh lama sampe kerasa ada crust terbentuk di atasnya ya. Semoga berhasil :) dan makasih utk feedbacknya.

      @@SpoonfulPassion halo lagi.. saya sudah coba bikin ulang, dan akhirnya bisa dapet crustnya, setelah adonan per cup saya kurangin dan waktu memanggang saya sesuaikan. Enak bgt, semua suka dan si ponakan sampe request minta dibikinin lagi hehe.. btw, gimana caranya agak kulit bisa tetep crunchy ya, krn kalo udah agak dingin kulit jadi ikut chewy

      Asikk akhirnya berhasil 👍🏻 Makasih ya utk updatenya. Sblm makan, saya panasin pake toaster dan kulitnya jd crunchy lg. Lapisin pake aluminium foil ya supaya ga gosong. Kalau kuenya terlalu gede dan ga muat di toaster, cb panasin di oven lg, hrsnya bisa crusty kembali.

      Hi there! I had a feeling it will lose some of its crunchiness so I did not go that route. But if the concern is them sticking to a certain muffin tray, surely use the liners. I greased mine really well and let them cool a bit until they release and are easy to be removed. Hope this helps.

    This recipe is not gluten free. Mochiko rice flour is glutinous. It says so in your information at the bottom of of the recipe.

      “Glutinous” refers to its consistency when cooked, which is like glue. It really is gluten-free, you can search it up if you’re still having doubts
