Bobby Flay taught me that if you salt you water enough while boiling pasta, you don't need any oil. The oil prevents the sauce from sticking to your noodles. Just thought I would pass on. Thank you both for teaching me how to make fresh pasta. Looks so good! Yummy!

Yes, no oil in water for pasta boiling! Newbie amateur mistake. Add kosher salt after water starts to boil and your done.

I would rather use the pasta roller and spaghetti attachment. It takes a shorter time to process. It looks like the extruder attachment is taking so much time.

I like the copper over the blue. It looks finished and professional. I personally have the 6qt bowl lift pro in Empire Red and I love it. I prefer bowl lift over tilt head but have been thinking of getting me a mini tilt head for smaller batches.

Yum ... now I need the darn pasta maker attachment for mine too, LOL. What I wonder is can you cook it al dente, I am kind of picky about my pasta and don't like it mushy. You've got me craving spaghetti now of course, I've got pot of homemade chili on the stove though, so thats what supper will be. I've been sick for almost a week, developed a cold over top of whatever else I've had so now I'm suffering with that. Thanks for sharing ... that is a very cool attachment.

Once you dry the pasta its shelf stable for eons in an air tight container. You can find more details on the egg aspect of pasta dough being stored dried outside of the fridge online.

I've the pasta extruder like you have. I also have the set with the roller and cutters and the KitchenAid drying rack. I came across the capellini & lasegnette cutters on sale at KitchenAid and ordered them too. I've not used the extruder yet. I'm wondering if there's a dough consistency between the rollers and the extruder? For the rollers the dough needs to be smoother and spring back when you lightly poke it after it has rested. Have you found this to be the case with the extruder?

The pasta attachment is a good tool if you make a lot of pasta shapes. I like the fusilli disk.

So much fun! You can not imagine how much fun it was to watch you two going through this "new" adventure! It is so much fun to watch you both in the kitchen together!!!! Yes you can use it and lots of other types of flour. We are finding every type we have tried works ok, but as you know, the textures are going to be different. So it comes down to your preference with taste and texture. You can really get creative.

Great job, but can I give you a hint, eliminate the olive oil in your water, it will prevent your sauce from sticking to your pasta. Never put oil in your water. Advice from an Italian 😊
As Italian, living in Italy... spaghetti 9inch... I sue you!LOL
Easier way. Burn the book of instruction that comes with it!
Formula for extruder (press): 3 part flour (10% protein - Gold Medal is one - Hydration related to protein percentage, richer flour requires more liquid) 1 part liquid, that can be any combination you like.
The dough will feel hard, if too hard, add water a tsp ad a time. mix for 7-8 minutes, shape it like a salame, and let it rest for 30 minutes. Slice, and chop. Coat the inside of the press with oil. There are other "tricks" involved. Next time
I prefer Romano cheese by locatelli.

May I suggest canning sauce instead of freezing? A little work but shelf life is longer and no worries of freezer burn.
Are you using a liquid measuring cup for your flour? I thought you should always measure dry ingredients in measuring cups and spoons.

Now when the newness wears off and you've tried every sort of pasta I'd like to see a lower calorie or keto friendly recipe made it such a thing is possible. I have my mother's kitchen aid and many attachments but that one.

I think the Kitchen Aid attachment that has the maker where the dough comes out flat and has the adjustments then put the flat dough through the spaghetti maker is better and a bit quicher as well as spaghetti is thinner.
How about making more soup with that new soup making machine ?

Making flavored pastas will be a lot of fun. I h add be a different pasta attachment. It's a roller and cutter. Now there is 6 humans and 2 Rick with a small portion for Kathy

After the first time I made pasta I’ve never bought store pasta after I made my own I’ve been making it for a couple of years now and I can’t wait to make a pasta dinner to share with my mother-in-law and my new house is done being remodeled so I can move into it here in a couple months

Your dough is on the edge of being too dry. Better than too wet I suppose. I've made a lot of pasta. I've never had a disaster but some were better than others. You're right, egg size differs.
The glass measuring cup is for liquids. The cup you used to take out the flour is the correct cup to use.

@@PastaWord I bought the other one first. The one you have looks like it strains the machine, does it? I bought the bowl lift 5 quart because it’s a little stronger when doing large dough batches.
@@MrTonyharrell No the machine shouldn't be straining, we made the dough too heavy because it was our first time. The other times that we made the dough better it went through real smooth. :)
