    Easiest way to preserve morels. Cut in half, place on window screen (I use wooden saw horse's and staple screen to horse's), place a fan at floor level blowing under and a ceiling fan blowing from the top. They should be dry in about 10 to 12 hours. Place in air tight container. When you want to reuse, drop them in hot water and they will plump up to what they were when you picked them. I like to use the hot/boiling water to cook my pasta in. It picks up the nutty flavor of the shroom. I've kept shrooms like that till the next season. You'll know they are dry when they resemble the texture of a potato chip

    Here in East Tennessee we call them Hickory chickens and dry land fish.
    We coat them with cornmeal and fry them in butter.
    They are sooo good.

    My dad used to do this when we had a good shroom season. There were years we found so many we would have them with Thanksgiving dinner!! Those were some good times!

    Yesss!!!!
    This morning i saw a morel under huge ginkgo trees for the first time of my life.
    I couldn't believe it, at first.
    That's because the place i found it was the garden of apartment complex in the city.
    I enjoyed the flavor and texture, even that was just ONE though. ^ __^

    I have been picking morels for 20yrs or so in NW Indiana. The only way I store morels is to slice them in half, buy a roll of window screen, a couple of wooden saw horses, cut however much screen needed to hold your morels and nail it to the horses. Lay out your shrooms on the screen with space in between them. I then place a fan underneath the screen on medium and if you have a ceiling fan, leave it on high. In about 12 hours they will be dry. You'll know, cause the bottom fan will sometimes blow the shrooms off the screen once dried. It's easy to tell if they are dry. They shrink and curl. They also will feel like a potato chip. Crisp. Then I put them in jars with air tight rubber latching lids. I've kept them that way till the next season sometimes (if I haven't eaten them all). Then, rehydrate them in the hottest tap water, or I even drop them in boiling water if I'm going to make pasta. After pulling them out of boiling water, use that same water to cook your pasta in. I will never store shrooms any other way.

      I have to ask u dry inside or outside? How long does it take approximately? And if outside what do the out side temps need to be to dry them ? I just found some today and can't eat this many. Thanks

    I can say I've used this this technique in the past and the mushrooms don't keep very long. Maybe 2 months if your lucky. The mushroom will rot in the freezer and get freezer burn. The best way I found to preserve morel mushrooms long term is to batter them in flower and fry them in butter. But don't fry them all the way until crispy. fry them 3/4 the way done. Then let cool. Place the mushrooms in a vacuum sealed bag. Then place in freezer. The mushrooms will last all year if you can restrain yourself from eating them. LOL Then when your ready to cook some, heat pan with butter then fry the mushroom to desire. They'll taste like you pick them yesterday.

      Self-defrosting freezers will not keep them as well as the manual-defrost ones. Another factor is whether the packaging is made for freezing or storage and how much air you eliminate out of the packages.

    For long term storage you can dry them. And I have soaked them in salt water then put them in clean water in freezer bags and freeze them in the water. The water will keep them from freezer burning. I do fish the same way.

    I've found about 20 pounds in the last week. One drying that is over a pound by itself! About 4-6 inch tall yellow morels are the absolute best! These are too big and not nearly as tasty, but a hell of a find! 4 days ago, those would've been fantastic. Happy hunting. The season is still alive and well up here in Canada😁😋😋😋

    vacuum sealing your morels works best, they'll last as long as you leave them in the freezer, but who can or wants to do that, guess it's how many you find & hoard for yourself lol I hoard a few back guess next year I'll do a vid on how I preserve them, letting them dry without shrinking & Vacuum sealing them works best

    I’ve read that sautéed, blanched or steamed for five minutes is best for flavor and texture.
    Sautéed last up to 9 months, blanched and steamed up to a year.
    Cool all in cold water then seal airtight.
    Thaw throughly to room temp before using

    I'm from oldschool knowledge about wild shrooms and I love the fact you guys say soak in salt water for atleast a few hours to kill bugs and draw them out, then give them a good rinse before the egg and milk dip, cause hardly nobody else says that. You GOTTA salt water soak and rinse these things cause they been out in the woods growin, of course there are bugs and miniature larvae in there!!!
    You guys didn't egg+milk dip then into flour..big difference there guys

    this might sound dumb but when u do want to cook them when u take out of freezer do u let them thaw first before cooking or can u just cook right out of freezer ? thanks

      Hey Sharon I took them straight out and cooked. They came out good !! Its almost like frying cheese as its frozen , It get a crispy outside without over cooking inside. Not even close to a dumb question !! Thanks and take care Shawn

      See now I soak them in salt water over night then rense them out to get all the bugs out. Man I could go for a big mess of them right now. I'm going tomorrow and see if I can't find some

    That's exactly how I froze my first decent haul, through Internet research and advice from my neighbor. It definitely works well. Those are some monster morels.

    Just found 3 today walking to the mailbox...nothing big but.....ohhhh yeah, so ready to devour them. Late for the season in anyone's opinion? Expecting a rainstorm tomorrow so hoping for more. Northern Indiana, stones throw to Michigan.

      I used to live in Chesterton. I'm now on the border of Nevada and California in the Sierra mountains. I miss my mushroom spots back there. I used to sell them for 50 a pound. It's not late in the season there. You still have about a month. When the lilac bushes die off, that's it for the morels as well. Happy hunting

    To any new morel hunters,check your local regulations. Make sure you are completely legal. Love morel mushrooms my absolute favorite. Imo skip the flour and just saute them in butter a touch of s&p. Bonus tip if you can catch burbot/ling put some sauteed morels on top for a very fine meal.

    Tried freezing like that. When I got them out, they all ha freezer burn. Ruined them all!!

      Well that sucks sorry they got wasted bud ( a lot of work down the drain ) I vacuumed sealed and had no issues months down the season . The best way I did them was after the soak, i cut in half , place on a cookie sheet and froze, Then removing them and vacuum sealing while still frozen Kept all the air out and make a great seal.     I have never froze them. My friend tells me they gey mushy that way. She fries them twothirds in the skillet then freezes them. Tell me what you think. I dehydrate. Them when i have extra but I agree they loose flavor and the texture is not as good!

      There's an enzyme that needs to cook off or they go bad, you can simply blanche them as well.

    I've never seen any ever that size... Well I have in freezer now..im gonna put in bag & vacuum deal til Sept.when I see my mom.havent seen in 4yrs..what surprise I have for her thanks...♡♡♡..but now froze...     You should not put salt in the water you soak your morels in - it kills the spores. Sprinkle the water and spores from your bags in your yard and after a year or two you will have morels growing in your yard. My friend Tom in Iowa has been picking shrooms in his front yard for over 10 years. Great easy walking spot to bring Grandma or Grandpa to pick one last mess of morels. God Bless!

    Number 1..cant preserve em if ya cant find em. Number 2...vaccum sealer is the best way..skip the flour.

      Ed I have to agree about the flour !! The best way I found later was to soak , cut in have and freeze on a cookie sheet , Then after frozen solid I vacuum seal them . You can use them any way you want then , Thanks Shawn

      I know that people do use gluten-free flour and breading and say that you can't tell the difference. I would experiment OR just fry your morels in butter without the breading. They are delicious that way, too!

      Finding Morels is kind of tricky. I know where Inky Blacks, Giant Puffballs and Hen of the woods usually grow but Morels are harder....they'll be there one year but not the next. Look for OLD rotting Elms number 1, in low grass with little brush or high ground cover (weeds). Other people know more than I do and I have just been lucky so check out local mushroom hunting events. And GOOD LUCK!! :) Please just be sure to take a ventilated bag to drop spores as you are walking along. I realize this O.P. was a year ago....have you had any success?

      at dairy queen you buy deep fried mushrooms. basically he coating with flower to freez them in fridge. when he take them out problem going just put oil in pan cook them that way kinda like deep fry the mushrooms. or if have deep fry do that as well;

      Morels release there spores as they open..... The mesh bag is kind of a hoax.... I'm a mycologist.... Carrying them in a mesh bag doesn't release any spores whatsoever....
