I love how they made a kid a love interest but not Jumpei, the one who was flirting with us for how long
I mean, there IS a reason. Junpei and FeMC together would conflict with Chidori being his love interest, which ruins a lot a character development. Still... did they HAVE to make Ken a possible love interest? At least there's some funny dialogue if also dating Akihiko.

I’m pretty sure Ami says multiple times in FES that he likes Mitsuru and respects her. He says it casually but I think he gets shy when he says it or something. Plus those two just make sense to get together. Like the MC and Yukari.
Kinda wish he did come back to the conversation afterwards. It really did seem like he just didn’t know yet
It does suck. He’d pretty much be like Yukari where he’s just the character you spent the most time with. But to be fair he did just lose someone he got attached to so.. it makes sense why he wouldnt be ready for a relationship.

It's funny that he rejects the only girl openly into him (goth girl aside, as she was slow burn). But, that said, he did just lose said goth love interest, so it makes sense.
Well, might have lost her. It depends on the choices you make in this, but canonical she pegs it. (For you young lot, "pegs it" is old English slang for "dies".)
After I saw a walkthrough of the male route where you can actually Chidori, so I wouldn't be surprised to see that done in the female version.
Plus, Atlus should do a Persona 3 Remake like, Square Enix’s Final Fantasy 7 Remake including all the stories; Journey and Answer from scratch as well as adding the female equivalent.
In Persona 4 Arena, it is implied that the "secret" Chidori ending is the canon one.

So my girlfriend at the time was playing this while I was playing FES. I remember her saying she was gonna romance Junpei and honestly I wanted to know how that goes in game. If she would’ve actually finished the game she would’ve been really mad.
