  • Buon giorno a tutti! In this episode, Nonna Mia, la nonna di tutti (everyone's grandma), fries up these little fritters called crostoli - usually reserved for Christmas time, but Nonna reckons that life is too short not to enjoy these beauties, whenever you like!
    To make the dough, dissolve one teaspoon of active dry yeast plus one cup of warm water, then slowly blend in 2 pounds of flour and 2 cups of warm water. Once mixed, cover the pot with plastic wrap and then cover with blankets in a warm place, until the dough doubles in size.
    Heat canola oil and test with a small piece of dough. Once hot enough, Nonna starts, as is her tradition, with her first crostoli in the shape of a cross.
    Thereafter, the world is your oyster - you can tuck in anchovies, roasted red peppers, olives, salami, chocolate - you name it. With savory flavors, we sometimes roll them in grated parmesan cheese!
    In this episode, Nonna makes most of them plain, with the exception of some with anchovies, for Frank, since it's his birthday and that's his favorite.
    She keeps some plain and the rest she drizzles with honey and sprinkles with lemon zest - that's her favorite, and after all her hard work, she has the right to choose the flavor - Chef', or shall I say Nonna's, prerogative.

    My Mother used to tell us the story of when our Grandmother, her Mother, would make something similar to this - she used to place her hand on the dough and squeeze it in her hand (index finger and her thumb) and a ball would form. She would squeeze off a ball and place in the hot oil.

      Sweet memories! Have you tried it? It is really yummy. You can have it sweet or savoury ... traditionally, we would make this at Christmas. Round - plan. Straight with anchovies. But now we make them all the time and use yummy bits like red peppers, or olives, or raisins, or lemon zest/honey .... so many options! xox
