I can say that it makes since for Luke's hair to be blonde because the more time you spend outside it is possible for your hair to get sun-bleached similar to how a black wooled sheep turns out brown by the end of the summer.
Yeah that's exactly what I was thinking! When he just left Tatoonie, Anakin's hair was golden blond, the same as Luke's hair when he just Tatoonie. By their early twenties (CW/RoTS for Anakin, RoTJ for Luke) their hair looks more brown than blond.
You can be born with blonde hair and become more brunette as you get older. This happened to me and my sister. Also, the more sun you get, the lighter your hair color becomes.
Okay, I'm going to preface this by stating that Ahsoka is my favorite Star Wars character of all time. Ahsoka was not the first female jedi for a couple reasons. First, she was never given the full title since she left the order while still a padawan. Second, and this is the more important one, Jedi Master Yaddle, who is female, appeared in The Phantom Menace, making her the first female jedi (not including Legends canon, as I don't know enough about it to say in that regard). And even without Yaddle, Master Deppa Bilaba also appeared in Phantom Menace, Master Luminara Unduli appeared in Attack of the Clones, and Masters Aayla Secura and Stass Allie were shown during Order 66. All of which happened before Ahsoka's first appearance in Clone Wars.
