    Perhaps the biggest thing about the new bolster design is that the edge from heel to tip will always be flush on the cutting board even after years of sharpening. Every time the blade is sharpened you lose a little bit of the edge. On the "Professional S" the bolster will eventually prevent you from keeping the edge flush with the cutting board, particularly around the heel, and there will be a gap.

    The most important difference is the type of cuts. Zwilling Professional S has a much thinner blade in section. The cut is much finer. Cutting is similar to cutting a razor blade. The bolster from Professional S has the roll to stop the blade from buckling and also to not hurt the hand. Cutting with Zwilling Pro is coarser, the blade is thicker in section, the blade lasts longer, the knife is heavier. Zwilling Professional S is suitable for people with a fine demeanor.

    I haven't watched the video yet, or used the S, but I like the Pro. That taper from the handle to blade (where my index/thumb pinch goes) makes it very comfortable to use. Edit: Hmmm..he actually recommends the S for people that use the pinch grip. Interesting. Not sure I agree but maybe that little ledge it gives better grip, IDK. I think I like the more curved blade profile, though, which he mentions is good for rocking.

    I went to a shop today, because they had a sale on pro S, 6 pieces including wooden block for 250 euros. I just could not buy them even for this great price. I just hated the handle. Pity they did not have the Kramer's Euro essential or 1771 knives.

    So I have the henckels international knives from a set - about $85. Are these knives high quality? What is the difference between those chef knives in the set and other henckel zwilling chef knives?
    Do I need to upgrade my chef knife?

      The Zwilling JA Henckels knives are a step up from the Henckels International knives. The steel and over all construction is little better. They will stay sharper longer for you which is a great benefit to upgrading!

      The wooden piece behind the knife at 2:22 is actually a waterstone sink bridge it is not knife storage.

    I've had the Pro S for 12 years now, It's getting pretty rough looking, the resin is chipping ect. I was going to replace it, but I think I'm going to try and restore it first...

      Did you take bad care of it? Dishwashing? Leaving it in water? Curious. Just bought my first set of knives from Zwilling J.A.

      @@INF1NI73 We didn't take great care of it, it found itself in the dishwasher too often. I was able to restore it, I fill the chipped resin with new resin, polished the blade, it looks like new now. Great knife.

    Why is the Pro S almost 2x the price of the Pro? I believe the Pro S has a more expensive/better formula stainless steel. On the Henkel website, the Pro steel is described simply as "Special Formula High-Carbon NO STAIN stainless steel," whereas the Pro S is additionally described as, "57 Rockwell Hardness = excellent edge retention." Am I correct?

      They both use the same steel, X50CrMoV15 as pretty much any knife manufacturer in Solingen, I don't know why they have to keep it a secret and claim it to be an exclusive Zwilling steel, other than making people think their knives are some sort of exclusive.

    My handles keep cracking.... I don't use dishwasher. The customer service in N.Y is GREAT... they replaced all my knives..... sometimes 2 times in 15 years.

      Zwilling Pure is a discontinued line that was identical to Four Star, but had a slightly different handle shape.

    The steel that's used for these knives is neither "high carbon" (0.5 % is not high) and it's also not "exclusive to Zwilling". Was it that that C&M made you say stuff like that why you started your own channel?
