real time in the business is so true i learned this with having a Puerto Rican carry out establishment in Detroit MI right on the avenue it was a truly great experience & yes you can consider 75hrs a week part time. You are so right. My mother and father came to the west coast in the 60s, opened 🎉 cream store, and turned into a barbeque restaurant. Then there was Leanard's barbeque and Kansas City barbeque, and a few others . My family's was Dixie Barbeque. They all migrated from the south. And every one of them had long line's to get that barbeque. So when you brought up west coast that just brought back good memories. Good luck to you and your future. One day, I'm going to try your barbeque. It looks really good. Peace

Bledso’s bbq and he’s the godfather of west coast bbq? Hahaha I ate there twice in Compton around 2011 and 2012 and I have to say it’s average bbq nothing special.
