Ig the reason the mob farm didn't work is because you placed all those slabs, you could place carpets instead. Really excited to see how this series will progress
Also, start with the top of the structure at sky limit, and the bottom of the structure as high off the ground as possible. This way, the only place mobs will only spawn is in your farm while your using it. Trust me, the xp will go crazy.

Hey cookie at around 17:21 you were complaining about not having enough levels as you've just started out.
I've been watching your videos for a while now and would like to help in some way, so here's a method that loads of people do including me:
The things you need are:
x4 chests.
x4 hoppers.
x2 Smokers (or Blast Furnaces if you're smelting ore)
And finally 2 levers.
-------------------------------------
What you want to do is:
Place 2 chests down, then 2 hoppers above those chests, place each smoker on top of the smoker then go behind the smokers and place a lever on the either the side or the back, then go back on top of the smokers place 2 hoppers and then finally the 2 chests. You then need to have a stable food source e.g. Potato or any type of meat, I recommend using potato as they are easy to get and work with fortune.
So after you've got the food supply, cook around 5 stacks for each smoker (to get a lot of levels) and make sure you put coal in them then after doing that check the chests to make sure it's been working then put another stack of food into each furnace AND press the levers on either side to collect them individually you'll get a lot of levels after a minute and the best thing about this method, EASY FOOD!

I learned that there are actually “carpal tunnel mice” made specifically for people who use computers a lot (my mom got one for her carpal tunnel, and although they look kinda goofy, they’re *SUPER DUPER* comfy). Love the video btw! A great start to an even greater series :]

The bottom of the mob farm needs to be 1 Block higher cause only mobs with armor were surviving. Love the series

The pillagers spawn randomly. That was a really cool spawn. Also you could of turned that spider spawner into a farm. The one in my world is used as a quick exp. farm and a emerald farm. If you find another one, you could just mark it.

I think getting collecting quartz gets you quite a bit of xp I don’t know if it gets you more than blazes but it’s definitely safer. Loved the video keep it up!

Pillage scouts can spawn anywhere the player is, I think it is most commonly where the player is building, as they are scouts looking to pillage someone. Most would be building around their base.
Love the house. You need to make a garden with a fish pool and little pagoda to rest from all the work in the middle.
