Scones:
Plain flour - 500g
Baking powder - 4tsp
Butter - 50g
Milk - 150 ml
Sugar - 80g
Vanilla sugar - 1tbsp
Eggs - 2
Raisins - 100g

I adore afternoon tea. Whenever I went on a cruise on a Holland America line cruise ship they alway served high tea and I always went even though dinner was just a couple of hours later. I always make a pig of myself.

I regularly go for afternoon tea one of my favourite way to met up with friends. My only comment on this is perhaps to drain the grated cucumber after you have seasoned as the salt will draw out more water and there is nothing worse than a soggy sandwich. Also never ver have I seen a jam sandwich as a filling choice for a high end afternoon tea in the UK.
And bread ALWAYS gets buttered
My dear try my (no soggy) recipe. Refrigerate the sandwich for 2 to 3 hour after filling. Cucumber sandwich is my favorite this is not a first time. Hope you like it👍

Old time scones didnt have egg in them. They dont need them to make decent scones.
