So when sewing the elastic to the straps are we suppose to leave extra space for that loop turner? Super confused how that’s suppose to go through the strap

You sew the elastic on the seam allowance of the strap :)

What’s the difference between sewing the elastic to the edge and sewing it to where you see it more to the inside of the fabric?

It’s a more invisible/reversible style as opposed to binding elastic that’s all.

I usually do 26 cm but if you want extra length you can do 30 :)
