Infinity and Eternity have no power over Thanos, because he is one of a very rare type of individual/ being who exists in EVERY SINGLE reality. Adam Warlock is another example of this, but there's not many others below the Omniversal level. Because of this, Thanos and Warlock are completely immune to most celesital/ divine/ multi-versal magic. Everyone knows how the MCU severely nerfed Thanos' powers/ magic in the movies versus the source material, but something that doesn't get as much attention is Endgame's ending. The Infinity Gems shouldn't of had any power to vanish Thanos, even just one reality's version of him. It's part of his foundational attributes as a character. Read Starlin's Infinity Revelation trilogy to learn more about this. Eternity, Infinity, the Holy Tribunal, and The One Above All actually reach out to Thanos and Warlock to save reality due to their unique attribute of existing in every single possible reality. It gives them really powerful and unique abilities/ characteristics, and abilities for each individual versions of themselves ro uniquely affect their realities in extremely potent ways. Due to this, according to the One Above All, Thanos and Warlock will ALWAYS exist no matter what.

If you watch the big three fight versus Thanos in Avengers Endgame you can watch Thor Go for Thanos's head multiple times with Stormbreaker. But Thanos already saw himself get decapitated through nebula's vision in the future so he knew to protect his head and keep an eye on Thor most of all and Dodge his attacks
