I’m not exactly sure how it works in this circumstance but I just think Saiki would not be able to pass Gojo’s infinity to turn him into stone. Also if we want a fair fight that makes sense, we need to Scale Saiki into the jjk verse.
I'll give my take on this. If we scale psychic energy to cursed energy (if Saiki even uses that type of power system, but we'll assume he does) then Infinity may be able to deflect/block his petrification attack. However, if we say like eye contact/light and stuff is the catalyst for the ability, then Gojo will turn into stone. Since if light can't react him/he can't see thus not being able to make eye contact, he can't see and he obviously sees during Infinity. So depending on which take you want, Saiki clears with no-glasses or Saiki clears with his plethora of other abilities he has.
