Re-making our soji recipe - a channel favourite with a few adjustments

The soji recipe was one of the earliest recipes we did on the channel (3rd recipe uploaded • Making Soji For Breakfast ). We had a chance to remake soji recently and decided to redo the video and also adjust the original recipe for Johannesburg conditions which require a little more liquid added to the recipe. It also gives a chance to improve the video and sound quality and hopefully makes the experience of watching the video much better!
Ingredients
250g wheat semolina
200g margarine
1 lt fresh milk
1/2 cup condensed milk
1/2 cup sugar
1 tsp vanilla essence
2 cinnamon sticks
1 tsp elaichi (cardamom) powder
1/4 tsp egg yellow food colouring
handful of sultanas
coloured almond slivers
splash of fresh cream
Serve hot with a cup of chai!

Hello Aunty G 😊...thank you for all your delicious recipes. I do try most of them, and the end result is always tops 👌❤ LOL my son always say the same thing about the elachi only ending up in his plate 😂.
Grinding the elaichi does help but it can be a stronger flavour so use sparingly.
Wow, it looks divine. I'm definitely gonna try ur recipe. I also make soji but my method of making it is different from ur one. Mine also comes out soft but I want to try ur one. Thnx for sharing all ur delicious recipes.

try roasting and grinding the elaichi into a powder instead. don't use too much though, it is stronger as a powder

Hi depends on how much each person dishes but should be good for 8-10 people. We cook soji for 30 people and usually use a whole kg of semolina.

Hi Aunty Devi, can I use brown sugar instead of white sugar & tasty wheat instead of semolina? 💕🌹
Yes you can use both substitutions. For the tasty wheat, don’t toast it as much and don’t use the 1lt milk altogether. Start with 750ml and then if the liquid is not enough add the remaining 250ml milk

Yes you can. You don’t need to toast the tasty wheat as much so be careful when doing that step. Also start with less liquid and check the consistency and add the additional liquid if required. Start with 750ml for 250g tasty wheat and go from there
