It looks like the area you want for an outdoor kitchen has that rock shelf holding back the upper terrace. Instead of removing those huge rocks incorporate them into your kitchen plans. Sort of a shelf to house your kitchen. I don't think removing them is a good idea, they're holding back a lot of earth.
That frontage is starting to look really impressive! You have all worked incredibly hard to get this far and I’m sure you all feel very proud of what you have achieved. 👍🏻

Be careful removing too much of the bedrock on that hill. It is those large stones that are holding the hill back from becoming just one huge mudslide someday. These decisions could cost someone's life, just so you can have an outdoor kitchen--which would only be destroyed in that mudslide anyway... I understand your desire for an outdoor kitchen but can't you build it up on your deck?
I thought the same thing. As well as the “step up” off to the side. Where will water drain to? Toward the house? I wouldn’t tear the bedrock out, I would’ve built the retaining wall above it. It’s naturally the better structural solution.

Do not go overboard as hill sides are prone to mud slides. As you disturb the original rocks the earth will loose its strength. But always a pleasure to watch your journey. Love from India.
Did you ever think about using the terrace below the house as garages. You could use steel beams for all sides and pour concrete as the tops and plant grass to double the front yard and then use the structures below as storage or garage.

You are doing such a brilliant work and I love the idea of having the part of the patio beyond the outdoor kitchen elevated. It will provide a bit more shelter and add some dynamic to the area. Also I like how thoughtfully you plan the changes to the outdoors. Everything you do is done with sustainability in mind! Especially saving pipes by 'heatjoining' them is genious! If there are short ends left, you could dig them into the ground next to newly planted trees and shrubs to get the water directly to where it is needed, the rootsystem. That is what I did with my hedge that was next to my neighbours' big trees ant they really thrived.

You need to build the drywalls and the terraces , don't dig the mountain too much....old men knew what they where doing, secure the slopes with terraces Ps you need to hire some drywalls masters, it's not easy to build retaining walls.

I agree with the comments regarding the hill. I would keep in mind some of unusual weather events occurring throughout the world, Spain for example as well as S.E. USA states. Plain for the worst.

Hi. Instead of digging the mountain wall away completely, how about digging a half circle and keeping it at seating hight so one can actually utilize that space and keep some retaining messures, then copy the half circle on the other side with your pole fencing and form a keyhole towards the terrace (poles on the one side and stones the other) which steps up into the terrace way. Nice work so far!!
In Argentina the conecction of water and gas use the metod of melting the tubes, is calling Aqua sistem, is fantastic because when they are melted is one solid piece (sorry my awful inglish)

Most people's inclination would be to put in some crazy path immediate to the front door but you're not building that house, you're building your home. You certainly know where those special long stones are for Italian steps and rectangle flagstones for a structured and calming entrance to this home. Your workmanship is an credit to you and an example to others.

Larger flat patio-yard area as you only have 5 more terraces to climb behind your place. you can have a clothes line and other simple things in the yard. 2 large 2k gallon catchment tanks above and adjacent to your house [about 30 feet above... you have 13psi without pump pressure added] septic access on the terrace below?
It would be lovely to build decorative steps with side walls down to the next terrace, then plant clematis on the side walls to tumble down each side of the steps.
Removing the bedrock that’s supporting the hillside is scary. I’d build a retaining wall on top of it. A retaining wall won’t be able to hold a mudslide back. Also, think about where water will drain too when setting your elevations on the house terrace. Idk if you’ve seen footage of the Appalachian mountain region in NC, but the massive destruction was caused by mud/landslides. I thought the deck was where you’d have your outdoor kitchen.
Lots of work! I’m wondering what is below you and if there is heavy rain if that pile of stones could potentially wash down the mountain as a hazard below. Hopefully for storage you can put up some sort of temporary containment.

All that rock is such a treasure. Honestly I think you should excavate for a pool too :) with a grotto 💖 You could make that place a mansion with more rock rooms, it is gorgeous.

We are considering all of this and making sure to be careful and to over engineer everything
