One of the areas that Turkish cuisine really shines is eggplant dishes. For many Turks and for me as well, eggplant is the queen of the vegetables. One of our famous UA-cam chefs once said that "we have hundreds of eggplant dishes in Turkiye". Unfortunately, eggplant is not well appreciated in the West as it is not properly cooked. You have to fry or grill the eggplants first to get its rich and creamy taste/texture. Few vegetables and herbs (such as tomatoes, onion, garlic, and parsley) truly enhance the taste of eggplants. If you stay long enough in Turkiye and try local food, inevitably few changes happen in your food preferences. By time, you start to like eggplant dishes, and eggplant becomes one of your most favorite vegetables; yogurt becomes an essential part of your diet; your meat preference shifts more towards lamb; you consume black tea almost every day; you get weekly/monthly cravings for desserts like sobiyet, baklava, kadayif, kunefe, firinda sutlac, etc.; sooner or later you discover the magical combo of honey+kaymak along with a warm cup of Turkish tea and a few slices of our bread. I see that some of these transformations (like developing a taste for eggplant dishes) already took place or are taking place. If you stay another year or two in Turkiye, maybe not you yourselves, but your palate will be irreversibly naturalized:)

I ve been only to the European side. Since loooong time I'd like to visit the Asian one. The vibe is different. It's a pleasure to watch you guys. Always smile on my face. Thanks for the video. Visited Kebapci Iskander. We found it quite average. The Iskander kebab was just doner, I really couldn't see much of a tomato sauce other than a tinge of red which really had no added flavour. It was just an ordinary doner with hot butter on it. And it was over priced for just an average food.
