    thanks for the video. My grandpha (italian) smoked prosciutto and fish in a 2x2 hut. In Argentina, where i live they used to make the peruvian method (using a 200 lts metal oil barrel whitout the up and bottom cover like a chimmey and the fish/meat hooked with ¨s¨ shape hooks).     Hey my friend, I’ve tried the Dorado which lives in the Cabo’s coast down in northern west Mexico and is amazing for smoking. Truly recommendable. All da best and congrats for your job.

    a friend of mine smokes fish and is really good at it. when he first started he had trouble with over smoking. so he researched and found that mangrove was the best to use but we don't have any here in north Florida, with further research he found that our native swamp titi was in the mangrove family. according to my friend he never has to worry about over smoking any more.
    smoked Amber Jack and blue runners are much better than jack craval.

    Good stuff mate. Another good seasoning you could try is brown sugar with salt and pepper, another good one is sweet chilli sauce. Really nice you should try it

    My favourites, in no particular order, Great Lakes eel, St. Lawrence sturgeon, North Atlantic herring, and Northern pike. I didn't put salmon in the list because it's its own food group. Lord how I love smoked fish. Awesome video.

    I did whole mangrove snappers today, about 14” not butterflied, and they were amazing. I also did a snook fillet on the half shell and that was amazing as well. I used apple pellets for mangrove and mesquite on my offset smoker for the snook

    I'm up in Michigan , we've smoked walleye, other than mentioned salmon and trout. But I usually soak my wo o d chips in bourbon or use apple juice in the water pan,, depending on what I'm cooking. For ribs just wrap the soaked chips in alunimum foil and poke some holes in it

    Whiting - smoke it then pick it and mix the pickings with spices and mayo (sea twang from Mrs Peters in Rio FL - near Jensen Beach, FL). Blue Marlin used to be awesome - but cannot catch/keep anymore. Mako (or any) shark is good smoked too. Tuna and/or bonito are awesome smoked.

    we use woodchips and or sawdust for smoking ,this go's in a tray that is placed over burning charcoal so it gets heated up to it starts to smoke ,if it starts to burn it gets emidiatly sprayed so the flames can not reach what ever is smoking ,also the meat or fish is hanged in the smoker so the exces fat can drip of

    Herring fish is the number one fish we smoke in the isle of man. .after coming out of the smoke house it's called a kipper..

    Buffalo fish and bullheads are pretty nice smoked too. 4am wishing i had some smoked fish right now. In minnesota we get a lot of salmon and trout but herring is really nice smoked too.

      Buffalo carp was my grandmothers favorite fish. All I remember about them is that they had a lot of bones.

    My son and I have been smoking swai and pollock. We buy frozen fillets, thaw them out, season with a rub, and smoke for a couple of hours at around 250 degrees. So far we've used it to make a cream cheese based fish spread that's great. I've had fish spread made from mullet and other oily fishes but prefer a milder white fish.

    Love smoked Speckled Trout, Reds, Flounder, Pompano, triggerfish, grouper, all snappers, blackfin shark, stingrays wings (skin them first, also sharks).

      Pompano is one of my favorite saltwater fish. We are planning a surf fishing trip this weekend, weather permitting. I have never even considered smoking it, since it is so good grilled, baked or fried. They should be in our area here in CF now. If you have any reports, please hit us up.

      i usually chunk mine but you could butterfly them.
      try making a fish dip with the smoked pomp,to die for!!
      you need to pull the meat from the bones and skin before it cools or it is really hard to do.

    Freshwater fish for smoking as Common Carp 2 to 6 lb fish are best, Water sheephead is a whitemeat fish, from lakes. also good smoked, Sheephead can also be pan fried, but remove the meat from skin side first, leaving only the white flesh.

    Any oily fish is the best fish to smoke. Here in New Zealand we smoke a lot of kahawai and mullet and it’s sweeeeeeeeeeeet az! L0L

    Here in St. Pete we smoke the living shit outta pinfish ... its got a very strong fish taste ... perfect without salt curing and smoked using all oak chunks and saw dust.. no coal over here.. good stuff

      yeh they make for a good base in a lot of foods.. I usually dont bother curing them due to their size and "salty" flavor...

    Just subbed your channel. At what temp do you run your smoker for fish? I watched others on You Tube go anywhere from 165 to 200 degrees. What do you prefer? Great video..thank you for the info.

      It depends on weather your going for fresh smoked (each today or soon) or long term storage. Longer your going to store it, the lower and slower you smoke it.

    Curious about large/small mouth bass. And blue Gill on the smoke. I normally head em and grill them whole. Never smoked a bass or a blue Gill tho. I do smoke the crap out of trout as I'm land locked in AZ.

      I have a dedicated barrel smoker for fish only. With 8 makeshift hooks hanging on the grill grate. Hell, got it on clearance at Walmart for 20 bucks 2 years ago haha. I head the fish and hook and hang them threw the tail bone area above the water pan. Makes some awsome smoked trout. All I've tryed tho.

      bluegill with mesquite, and a touch of sweet bbq sauce, you will not have a pond anywhere near with any keepers afterward.

      I caught some of those on my trip the Delaware Bay a few years back. They were great straight up fried or grilled. They remind me of sheepshead.

      Use this recipe. You can hang them if you leave the skin and scales on like we did here. It's pretty basic and you can do a lot of different ways depending on what kind of climate you have.

      You can use any kind of hardwood. The best are apple, hickory, oak and pecan. I think I used apple on this cook.

    If you ever get the opportunity to try smoked sturgeon, don't pass it up. Another favorite of mine is smoked American shad.

      We have sturgeon in FL Gulf but they are protected. American shad spawn here in our area in the St Johns River. I have yet to catch one, but if I do, I will try it.
