Wow very nice.... actually in Kerala dish appam, we boil little bit of the batter (kappi kachiyadhu), and add it with coconut milk to the batter, finally ferment.. only difference is no urad dal in appam.... will try this out for sure 😊👍
For Aappam, they add little toddy for fermentstion and poured with a rotation in a kadai type ( Aappa Chatti ) pan and covered with a lid; but once taken out, the outer edge will be thin and crispy and the centre portion will be fluffy, soft with porous on it. To be eaten with coconut milk+sugar or coconut chutney. Easily digestable from a one year baby to 80-90 year old man.

Sir when he add salt not shown .my wife makes appam like this. This is one if the method of making appam,,kali kindi thosai also we say. Goes well with coconut chutney.
We know this dosa, in my child good my mother was preparing ,which is little different way that we use to take little like ganji(small rawa) and boil this rawa like ganja. When cooks mix the other dough and mix nicely, live it for 8 to 10 hours, then in the mn mix the coconut milk and then prepare dosa. Now here it's the same

After grinding dosa batter we can put some cooked rice to it and grind once again then make dosa after fermentation for 8 hours. It is much easier.
