On my uncles farm in summers during the 60s and 70s he used to say about tatties that it didn't matter what tattie you had or any vegetable for that matter it was always about how you cooked it, my favourite tattie is the Kerr's pink
Why Idaho or why Wisconsin or why other two states that they grow in. Is that what you are trying to say. Maybe you come to Wisconsin to Heartland potato farm that grows potatoes for Lays chips and that is all they grow potatoes for.
My only concern is the use of fewer varieties and genetic engineering using gene splicing. These are super dangerous practices, and is a real threat to mankind. Modern agriculture does have some drawbacks.
