    Ingredients:
    *For the Rice:*
    - 2 cups basmati rice
    - 4 cups water
    - 2 bay leaves
    - 4-5 cloves
    - 4-5 green cardamom pods
    - 1 cinnamon stick
    - 1 teaspoon salt
    *For the Meat:*
    - 1 kg chicken or mutton, cut into pieces
    - 1 cup yogurt
    - 2 tablespoons ginger-garlic paste
    - 2 teaspoons red chili powder
    - 1 teaspoon turmeric powder
    - 1 teaspoon cumin powder
    - 1 teaspoon coriander powder
    - Salt to taste
    *For the Biryani Masala:*
    - 2 large onions, thinly sliced
    - 3-4 tomatoes, chopped
    - 2-3 green chilies, slit
    - 1/2 cup fresh coriander leaves, chopped
    - 1/2 cup fresh mint leaves, chopped
    - 1/2 cup cooking oil or ghee
    - 1 teaspoon garam masala powder
    - Saffron strands soaked in 2 tablespoons warm milk (optional)
    - 2 tablespoons lemon juice
    Instructions
    *Preparing the Rice:*
    1. Rinse the basmati rice thoroughly until the water runs clear.
    2. Soak the rice in water for 30 minutes, then drain
    3. In a large pot, bring 4 cups of water to a boil.
    4. Add the bay leaves, cloves, cardamom pods, cinnamon stick, and salt to the boiling water.
    5. Add the soaked and drained rice to the pot and cook until the rice is 70-80% done. The grains should still have a bite to them.
    6. Drain the rice and set aside
    *Preparing the Meat:*
    1. In a large bowl, mix the chicken or mutton with yogurt, ginger-garlic paste, red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Marinate for at least 1 hour, preferably overnight for better flavor
    *Cooking the Biryani:*
    1. Heat oil or ghee in a large heavy-bottomed pot
    2. Fry the sliced onions until golden brown and crispy. Remove half of the fried onions and set aside for garnish
    3. Add the marinated meat to the pot and cook until the meat is browned and cooked through.
    4. Add the chopped tomatoes, green chilies, half of the coriander leaves, and half of the mint leaves. Cook until the tomatoes are soft and oil starts to separate
    5. Add the garam masala powder and mix well.
    6. Layer the partially cooked rice over the meat mixture evenly
    7. Drizzle the saffron milk (if using) and lemon juice over the rice
    8. Sprinkle the reserved fried onions, remaining coriander leaves, and mint leaves over the top.
    9. Cover the pot with a tight-fitting lid. If the lid is not tight, seal it with aluminum foil to ensure no steam escapes
    10. Cook on low heat (using a heat diffuser if necessary) for 20-30 minutes until the rice is fully cooked and the flavors are well combined. Alternatively, you can bake the biryani in a preheated oven at 180°C (350°F) for 30 minutes
    *Serving:*
    1. Once done, gently fluff the biryani with a fork to mix the layers without breaking the rice grains
    2. Serve hot with raita, salad, and your favorite chutney
