    I randomly stumbled across your book The Spice Tree - love the way you write! Indian cooking is close to the heart but ironically I've mainly tried cooking chinese, thai and western recipes - so I thought I'd brush up on Indian recipes to keep that connection going! :)

    this changed my curry life!!! I use the headnote spice technique and now I'm not always putting extra spices like cumin and coriander in like I did before. It's so much better.

    Greek yoghurt or Creme Fraiche for the meat dish itself but for marianading the cheapest most acidic yoghurt is best as it tenderises the meat most effectively

    I just attempted the meat recipe this evening. I didn't put in quite enough onions and I put in half a capsicum a little too late, both mistakes that can be rectified next time. It was a good meal without a lot of effort involved. Thanks for the video.

      I've had some great results, Nisha, thanks! I'm having a hard time finding "mustard paste." Is this what Brits call prepared mustard in a jar? What brand do you like and where do you buy it?

    Hi Nisha the videos are fab cooked a brilliant curry last week, but I also tried to make a potato type curry with yoghurt but should the potatoes be pre boiled?? And when I added the yoghurt it split and curdled a bit because of the oil in the pan, is this because I didn't use creme fraiche?? Thanks for these videos they are fab, also going to your restaurant next Friday for my fiancés birthday can't wait 😃
