It’s said that nothing in the world is sweeter than saltfish and after having this authentic saltfish dish from the Commonwealth of Dominica, 🇩🇲 you will lick your fingers! I will show you how I prepared this delicious codfish/bacalao/salted pollock/saltfish. It can be eaten by itself, or served for breakfast, lunch or dinner. This tasty saltfish is an excellent accompaniment to avocados, bakes or johnny cakes, fried plantains, green salad, crackers, rice, green bananas and other ground provisions. Ingredients & Method
Salted Pollock, Olive Oil, lime juice, hot pepper sauce, onions, bell peppers, seasoning peppers, chopped celery, garlic, a dash of black pepper, basil, oregano, 2 dashes of curry powder and my homemade green seasoning.
Remove excess salt from saltfish. Sautee the seasoning then add the saltfish. Don't forget the curry powder! Enjoy!

Do you have a video on how to cook off the salt when boiling?
Hi Salt Life, thanks for your question. I did not make a specific video but in this video, I mentioned how I do it/what I do. You rinse the saltfish after removing it from the packaging, place it in a pot, add water to cover the saltfish, squeeze lime juice (to reduce the fresh scent) and add a tablespoon or two of sugar to the water then bring to a boil. Do not allow the water to dry - change the water - throw it out and add more water to the pot and bring to a boil. Taste the saltfish along the way to determine if the salt content suits you. Once it does, then your saltfish is ready.
