    I made this tonight for my birthday tomorrow and it is wonderful. The subtle orange flavor is really nice. I had vanilla ice cream with pistachio dust sprinkled on top. Thanks Beth for another great recipe.

    I am amazed how u come up with so many great ideas one by one! I love pistachio flavoured desserts and was looking for some recipes to make use of the big bag of roasted pistachios i had bought at a really cheap price during a vacation!! So thank u!!!!

    Oh my this looks absolutely amazing. My mum's birthday is coming up in July and I barely ever bake these days as always trying to get the balance of being healthy and cannot resist home made baked goods but think this would make a perfect cake for her

    I've been going back and forth over what dessert I want to serve after Easter dinner (vichyssoise, rack of lamb with blueberry beurre rouge courtesy of Chef John/Foodwishes, honey glazed carrots, tomatoes Provençal) and this just went right to the top of the list. Could you make this in cupcake form? There's a big potluck supper I will be attending at the end of April and while I usually make mini cheesecakes topped with a sweetened sour cream and fresh fruit, this olive oil cake would be very interesting and different. Thanks for another stellar recipe Beth!

    These look so lovely, Beth! I have 2 questions.......regular olive oil or extra-virgin and........unsalted or salted pistachios?? I'm anxious to try these! Thanks for sharing!

      Great questions! Either type of olive oil is fine, and definitely raw "unsalted" pistachios is the way to go! :) . Hope you enjoy!!

    These look scrumptious Beth, I’m gonna give them a go for my hubby’s birthday. He wants to take some cakes to give to coworkers. By the way, I’ve done both the fig cake and the campfire dessert cake and they were delicious. I’ve been asked to make them again, they were a complete success. Quick question, can I replace the pistachios with maybe almonds or walnuts? In case I can’t find any at the grocers. Thanks, Gabriela

      Oh sure I would go with Almonds. They would bake up better in a cake like this :) . I'm so glad the Fig Cake and the Campfire Cake were a success! Those are 2 of my favorites too! :) HAPPY BIRTHDAY to hubby! :) xo

    I can’t wait to try this out for summer entertaining. Yet another recipe from EWB :) If we’re using the food processor to grind the pistachios, do we still have to sift it through a sieve? I love your recipes and your channel, you’re so inspirational!

      Awe thanks! :) . So glad you enjoy it! I would sift the other dry ingredients and not worry about sifting the "pistachio flour" if making in a food processor :) Hope you enjoy!!

    Hi Beth! I just baked this in an 8” round pan (don’t have any tart tins at home) and the cake tastes great! but was a bit wet / mushy ..Cake is done on the outside..toothpick cake out clean..just wondering if it’s suppose to like this or maybe I need to make some adjustments to the temp with an 8”? Any advice? 😅 Thank you !

    Hi Beth, the cake looks wonderful.
    Question, what do you suggest in place of orange juice?
    I am not sure if I want to substitute it with water because, orange juice has some acidity which in your cake is contributing to leavening?

      Sure you could absolutely replace with water no problem at it. It doesn't effect the leavening so no worries! Hope you enjoy :)

      Oh sure if it's a standard 9" cake pan, that's 2-3 inches deep I would say check it at 20 mins :) It's it's a 9x5 loaf pan, check it at 30 minutes and continue to bake until a toothpick comes out clean :)

    Hi Beth, Love this recipe. Does it matter if the olive oil is extra virgin or just regular olive oil? As one has a more fruitier taste.

      It really could be either I've found :) I used extra virgin in the video since that's usually what I have in my pantry and it worked great!

    Beth, can you PLEASE tell me where you bought that long-handled narrow egg whisk! I see variations of it, but none quite the same & I can’t seem to find it anywhere. I would so appreciate a point in the right direction. Thanks!

      Oh I know I love that little whisk ha! It’s so handy! I bought it at Williams Sonoma a few years ago :) but I’ve seen them on amazon too under “mini whisks” :)

      Lifesaver! 🙌🏼 W-S doesn’t seem to have it online, but I found an identical one on Amazon (“stainless steel mini bar whip”). I checked your Amazon store 1st & then commented for help when I couldn’t find it there. Not sure what it involves, but it might be worth it to add to your Amazon store(?)

      Well depends on the pan. This recipe would fit a 9-10 inch fluted tart pan, but for something bigger you may want to 1.5x or 2x :) Hope you enjoy!

      Ha! Yes that can happen if you grind those pistachios too long! So just grind until a flour forms and then stop :)
