Making strawberry cupcakes (strawberry cake)

    Strawberry Cupcakes

    1. Fill the muffin tin with muffin cups
    2. Beat the eggs, add vanilla extract, salt, sugar, and honey and mix.
    3. Put it in double water and heat it while stirring with a whipper until it reaches 38-40 degrees.
    4. Put unsalted butter + milk in double-boil water and heat it to over 40 degrees.
    5. Whip the egg batter at high speed using a hand mixer.
    6. Whisk until the dough is white and retains its shape for about 3 seconds when dropped.
    7. Clean up air bubbles while whipping with a hand mixer at low speed for about 1 minute
    8. Sift white rice flour for confectionery use, corn starch, and baking powder again and add them. Mix well with a spatula while turning the bowl.
    9. Add some of the dough to the double-boiled unsalted butter + milk and mix to make a paste.
    10. Add the pre-mixed dough as if pouring with a spatula and mix quickly
    11. Put the dough in a piping bag and squeeze it into muffin cups up to 80-90%.
    12. Tap the frame on the floor
    13. Bake in a 160 degree oven for 16-18 minutes
    14. Cool the muffins and make a hole in the middle with a large round tip.
    Cream & Strawberry
    1. Remove the stalks of the washed strawberries and cut them finely (about 3)
    2. Place whipped cream (110g) in ice water, add strawberry jam, and whip until stiff.
    3. Add chopped strawberries and mix
    4. Put it in a piping bag fitted with a round tip and squeeze it into the muffin hole.
    5. Place whipped cream (170g) in ice water, add raspberry jam and sugar, and whip with a hand mixer (a slight mark remains when the cream is dropped)
    6. Whip only half of the whipped cream to an appropriate level to squeeze with a whipper (whipping separately as it can be bubbling)
    7. Put it in a piping bag fitted with a large round tip and squeeze it into the desired shape.
    8. Top with strawberries

    15g cornstarch
    2g baking powder
    38g milk
    30g unsalted butter
    Cream & Strawberry
    110g fresh cream
    Strawberry Jam 35g
    3 strawberries
    170g fresh cream
    7g sugar
    50 g of raspberry jam
    12-13 strawberries for garnish

      머핀컵은 크기가 45mm에요~저는 이 크기가 두루두루 사용하기 좋더라구요!!💓
