I think Doc Brown used his time machine to go back in time to run the race as many times as possible till he won. We would never know because for us the race had not happened yet. Each time Doc Brown goes back in time to race it is the first time the race is ran in our timeline. The Doc rewrites race history and none of us are the wiser.
