Addition of spices and herbs like turmeric, cumin, mustard not only enhance the flavour but also increase its nutritional value. A traditional Indian meal consists of all these elements, but its nutritional value depends on the quantity of ingredients and the cooking methods.
These four Ayurvedic recipes guide us through simpler and wholesome meals which benefit our health.

I just made my own version of the Moongdahl - was delish!
Cozy-dahl
- Two potatoes, diced
- Two carrots, diced
- Two onions, diced
- Half a fennel, diced
- A handful of frozen spinach
- One to two tablespoons of finely diced ginger
- Graham marsala (plenty of it)
- Some peppercorns
- Turmeric
- A bit of chili
- 100-150 g rice
- 100-150 g lentils
- Salt
- Ghee, plant-based butter, or similar
- 4-6 dl water (at least double the amount of rice and lentils)
- Lemon for serving
1. Toast spices and ginger cubes in the fat at medium-low heat.
2. Add onions and some salt, stir, and simmer for a few minutes.
3. Add other vegetables and more salt. Stir regularly and sauté at medium heat for a few minutes.
4. Rinse rice and lentils and add them to the pot. Stir and wait for a minute.
5. Add water, stir, and simmer for 20-30 minutes.
6. Serve with a squeeze of lemon juice and optionally a papadum on the side.

Ayurveda and using garlic, onion and non stick pans.
Onion garlic is not prohibited in Ayurveda..and non stick pan isn't the best, but sometimes can be convenient. Also it's partially used here, so feel free to try them out on a regular pan

I'm a practising Chef just a foot note not poking negative with my observations just a healthy suggestions ... "Use of vessels.
Type of vessel that you use for cooking is most important than what you cook." Best Cream of the Crop are Earthen vessels next is bronze and next to that is copper.... Thank you after noting it you can always delete it .... I apologise if I'm wrong ... Thank you for your wonderful experience

as long as something is growing locally, its ok. its part of a meal, along with many other ingredients. basic reasoning!
@@SugarSpiceNiceIndia well that way everything can be and infact is grown locally these days...they just come laced with a whole lot of pesticides and hormones and what nots. Can't get so basic and simplistic too these days...got to be more aware and apply your mind!
