Hi! Im not sure I understand your question correctly but if your asking why I don't use simple syrup to moisten my cakes.. that would be because my cakes are already moist and I don't want them to become all soggy! I hope I answered your question!😁

My guess would be yes. As long as you've stabilized your cream it should be good to go.

Oven is ON at the lowest heating possible. I had mine at 150° F.
