The Ultimate Greek American Gyros

- Follow my easy recipe to create the most delicious “Restaurant Quality” gyro pitas at home. This gyro meat can and should be doubled and even tripled because it freezes well. As a matter of fact, your family will beg you for this Greek-American classic once they try it.

Serves 6:
1 medium onion, quartered
1-pound ground lamb
1-pound ground beef
5 garlic cloves
2 teaspoons salt
1 heaping teaspoon dried oregano
1 teaspoon finely chopped rosemary
1 heaping teaspoon cumin powder
½ teaspoon ground black pepper
Pinch of crushed red pepper flakes
Equipment: 9 x 5-inch loaf pan
For the Sandwiches:
Pita bread
Onion slices
Tomato slices
Tzatziki Sauce
Lettuce
Crumbled feta cheese
INSTRUCTIONS
Preheat oven to 325 °F, 160 °C.
Place the garlic cloves in a food processor and pulse until very finely chopped.
Add onion and puree until smooth.
Add ground beef with all of the spices. Pulse until the mixture becomes like a paste. Scrape down the sides of the bowl in between pulses.
Place the mixture in a loaf pan. Compact it as much as possible.
Bake for 45 minutes to 1 hour or until the internal temperature registers 165 °F.
Allow the pan to cool at room temperature completely. Refrigerate at least 2 hours before removing from the pan.
Remove from pan onto a cutting board. Using a sharp serrated knife, slice it thinly. Pour all of the pan juices over the slices along with any of the fat that has gelatinized. It adds so much flavor when heating it up for the sandwiches.
At this point, the gyro slices can be placed in a freezer-safe bag and frozen for future use.
To make the Gyro sandwiches, place a cast iron pan over medium heat and cook the gyro slices until they are browned on both sides.
Warm the pita bread slightly. Place some chopped lettuce, onion and tomato slices over the pita, the warm gyro slices and tzatziki sauce with crumbled feta. Serve immediately. Enjoy!
NOTES
Freezer Instructions: Place the cooked gyro slices in a freezer bag or an airtight (freezer-safe) container and store in the freezer for up to 3 months. When ready to use thaw and pan fry until golden.

I came across this recipe recently and tried it today. I used 50/50 ground beef and ground lamb I also added a little Thyme to it. It is amazing. I have tried other recipes for the meat over the years but this is by far the best.
I will try it again with just beef. Ground lamb where I live is $8.99 for 14 ounces.

When I went to Greece. I ate the gyro and they put french fries inside the gyro. It was something new for me. I love gyros.

I also had fries in my Gyro in Greece. Tasted great. Added a salty profile. Meat, potatoes, veggies and bread. All together.

Oh this is the ultimate sandwich......so tasteful and yet easy to assemble if you guide us along! My favorite Greek sandwich especially the wonderful sauce! Wow! Can’t wait to make this one! Your the best !
This is in no way a Greek Gyro! More like what a donair maybe. Minced meat is not used in Gyro. This may be a good and tasty recipe but it's not a proper Gyro. Gyro is made with thin slab's of pork ( now a days) a few decades back they used a variety of meat pork, lamb, beef. again they were thin slab's stacked high up on a spit. Don't know where you came up with "Minced meat" Not saying this is not a good recipe but call it a donair or something else. Not a Greek Gyro.

Dimitra, I have the pleasure of running a kitchen ministry at my church that feeds the needy in our area every Saturday with a dinner like meal but for an early lunch. I also cook for my Knights of Columbus counsel for our monthly meeting so we can have a dinner together as brother knights. I have made your white bean soup (fasolada) as a second course for a fund raiser and everyone loved almost as much as the Greek country salad that followed. Anywho, I thought you should know that I am going to make the Gyros once we are able to serve a regular meal again after all the dust settles from covid scare. Right now we are limited to sandwiches in to go boxes and can't use our hall to let our guest sit and enjoy their meals.
Update We made it and everyone loved it. Our needy guest got a gyro with tzatziki, rice pilaf and a Greek country salad with a classic American brownie. This one is so on our "we need to make that again" list.
There's no ground lamb here either. 😒 I wouldn't have tried to make this without lamb, but I trust you.
Just add the lamb! I'd probably do 2 parts beef, 1 part lamb. I'm sure you'll like it better that way.
It's NOT the gyros you want. It's the Donair!! Try it and it will then be your go to all-time food treat! No guff, no hype, no bull! The trick is in the sauce. The Donair sauce is not the tzatziki but a sweet garlicky version.
Either everything together in a pita same as you know it or or as a Donair pizza w onions and tomatoes smothered as you like it -and you will, with sauce. You will be coming back to this addictive treat forevermore!! It's an updated Canadian version taking the world by storm of the same old same old!
by donair, you mean doner kebab. doner means gyro in turkish bro. i love turkish kebabs too. both are awesome. in greece, they aren't prepared this way, they are prepared exactly the same way as a doner kebab. sliced meat stacked up on a turning spit. they they rotate it and shave it off. it is mouthwatering around monastiraki square.
It's not the doner, kebob nor the gyros you want! It's an actual Donair you want! Not some Greek or Mediterranean things that taste like shite but a real full fledged Donair! A donair pizza is next on the list of things you wanna go for!

I've been on a Mediterranean food kick, but its not always easy to get to places that serve this flavorful food. This is a great idea, and looks easy to prep. Gotta try this, thanks for sharing.

When done right, a Gyro is the best sandwich ever made! My Dad (who is not Greek) joined the Greek Orthodox Church late in life. Everyone from the church came over to our house and brought authentic Greek cuisine with them from their homes. Thought I had died and gone to heaven. The salads alone were to die for! Never had anything that good in a Greek restaurant in southern California.
I did this two weeks ago and my family loved it! I'm making it again today and including my extended family.

I cooked up my second loaf only this week Tuesday 20th April 21 using your recipe. Yesterday had friends over and used this for the lunch. They went crazy over it. My husband just makes very short work of the loaf😝🤣🇿🇦 it's extremely delicious 👌🤣👍and freezes fabulous

Question: Growing up just south of Detroit, MI, a great weekend destination was Greek Town. My favorite of all of the Greek eateries was The Golden Fleece. It was and is a hole in the wall kind of venue. Very narrow and the Gyro meat is right by the street side window. Super great place. One thing I remember most was how their Gryo meat had a real spice after taste that would last a while. I Loved their Gryos. What ingredient do you think they used to get that kick. I don't think it was red peppers.

I know im going to insult any decent red blooded Greek but I gotta say it: My fav gyro sandwich so far is the one I get at Arbys. The meat is so delicious and the sauce, while missing the flavor of cucumber and dill, is wonderful. Ill have to give this recipe a try.

I love "GYROS" and l used your recipe and I've tried others recipes as well. But l prefer "SOUR CREAM SAUCE" versus the SAUCE that's Traditionally used on "GYROS". Two Thumbs up 👍👍

While this may be a decent representation of gyros you will get here in the US, they are NOT representative of gyros in Greece. Very different indeed and much better. Worth the trip!😎

Actually the Greek American gyro was how the traditional gyro used to be.
Greek Australian here in Melbourne we make it different again, standard was lamb gyro on charcoal with lettuce, tsagiki, tomato in pita.In the last decade the greek(euro) style gyro has become very popular.

You say no one knows what is in American gyro meat, and you also say it is unhealthful. How do you know it is unhealthful if you don't know what is in it?
I had a Greek restaurant for 10 years and saw what was being sold (by the food wholesalers) and it's nasty. But you can feel free to go to a local restaurant supply store and read the box yourself :)

Wow, you're the woman! I made this recipe today and it came out great. I am from Houston , originally, married a military man, so that took us to several different states. After his retirement we moved back to Houston/Pearland. Last year we left Pearland moved to Amarillo, TX to live a quiet lifestyle. OMG! this place is so left behind, it's horrible. The restaurants are the worst and we been around. We have to cook a lot to enjoy good meals. Your videos are life savers.
Hi Dimitra, I am from Bahrain. I went to collage in the US. I discovered Gayros (American way) when I lived in Florida and I liked it a lot. Since I am back home I never get the chance to try them again until I came across your video. I tried it and was shocked that I got the same taste I had 30 years ago and even better. I know this video is older but I just found it because I’ve been craving beef gyros. I noticed you didn’t use ground lamb. Does it taste the same without it? I don’t know because I’ve never made them myself
This is amazing. Great tip on cooling before slicing and then reheating right before serving. Kind of loosely mimics how they do it in the restaurant though really!

My only question as a professional chef is why promote the processed version when you can do the real version and it’s so much better? It’s not an insult, I just don’t understand why the American version would be preferred. And I was born and raised in Arizona.
This gyro isn’t what they do in Greece the cooking method is more like a kofta or even an Adana. As it uses minced meat.
Typically gyro in Greece is finely sliced marinated pork, stacked up and spit roasted for hours. Then they slice thin strips off the spit…
