- Here is the simplest way to make deliciously good YANGZHOU FRIED RICE. You don't need to buy take out from your favorite chinese restaurant, no more. Make this at your own comfortable kitchen and enjoy. Or make double the recipe & freeze them for next few days quickie tasty meals.

5 oz. shrimp. shelled, de veined, and cut into thirds
1 cup green peas
2 eggs
3 cups steamed rice, day old
as needed cooking oil
2 Tbs. ginger, minced
2 Tbs. garlic, minced
2 Tbs. light soy sauce
1 Tbs. sesame oil
¼ tsp. white pepper

Hi Anna, my co newyorker. Regarding day old cooked steamed rice. Try use brown rice, with less water. Say, 1 cup brown rice to 1&1/2 C water. after cooking, let it cool down for an hour. Then separate each grain. they are so easy to separate grain. Then you can use them for your fried rice. Thanks for watching.

I'm looking for a fried rice recipe that looks similar to this. Except the peas are swapped with long/french beans(?). And additional slices of visible salted fish. I've been searching high and low wondering which province does it come from and what it's called. Is it a twist on the yang zhou fried rice? I recall it being pale (no dark soy sauce, not sure if light soy is used), it might have been seasoned with only salt and white pepper. The white pepper taste is distinct
For light looking fried rice, yes use just salt no soy sauce. Thanks for watching.
This is a simplified version of a more elaborated Yangzhou fried rice(*) using at least 6-8 ingredients besides the sauces. I saw it on UA-cam. Just do a search. I tried cooking the technique shown on that video ie adding the soup based liquid to fried rice, and the result came up semi dried which tasted quite different to somewhat over dried fried rice using normal technique.
This original fried rice does in fact uses Many ingredients.

Hello Chef. This is one traditional dishes I always make to go with others I make. I prefer dark soy sauce for that traditional look in restaurants. What type of rice you used and how long you keep it in the wok? Also, what does YangZhou means? Earlier this week, I had pork, broccoli stems, mushrooms, red pepper and onions all cut in very thin slices. It was really good. This weekend we plan to try frozen stir fry that we bought at Costco. It was on sale so we thought of giving it a try. The instructions are quite strange. It says heat the wok / pan for 7-8 minutes. Then cook from frozen, no blanching. Let me know what you think of this process and I'll let you know how it turned out. See you next time Chef.
Yangzhou, is a city in central Jiangsu Province, East China. They have unique type of chinese cuisine. Regarding costco quick boxed frozen stir fry dinner. I haven't try them. I dislike TV dinner boxed frozen foods, LOL.. Thanks for watching, chat to you next time.
@metalandy in my experience, cooking from frozen results in soggy vegetables. not too long ago, i started cooking my frozen peas and carrots in the microwave for 2 minutes, drain water, and use that to stir fry. you'll get that 'char' on the vegetables if they are already cooked and water drained, otherwise they'll be soggy. i recommend blanching, whether microwave or boiling water, frozen veggies first before frying, just make sure you drain the water. water = soggy
Add some sweet n sour sauce , water chesnuts and Pineapple for a even better taste.

You can reduce the amount of oil. We used healthy type cooking oil so that is not critical.
