      Fantastic! Hope you enjoy. I normally use chicken for this but we had lots of mushrooms so used them and it tasted super :)

    Fantastic video, as always. Great presentation and instruction, Josh. Can you show how to make mix powder? I'd like to from scratch without using premade store bought mixes of any kind.

      It's purely these mixed together, hope it helps
      2 tbsp Madras (Powder - Mild)
      4 tsp Paprika (Powder)
      2 tsp Coriander (Powder)
      2 tsp Cumin (Powder)
      2 tsp Turmeric (Powder)
      1 tsp Garam Masala (Powder)
      1/2 tsp Garlic (Powder)
      1/2 tsp Ginger (Powder)

      @@TheCurryKid Thanks! And I see there's madras powder as an ingredient. Any sub-recipe for madras powder? I'm excited to really go from scratch.

      I've not tried this but the only recipe I have for a curry powder is as follows, hope it helps. You will use about 1/6 of this in your spice mix which itself will be enough for about 10 dishes:
      3 tbsp coriander powder
      3 tbsp cumin powder
      1 tbsp turmeric powder
      1 tbsp chilli powder
      1 tbsp fenugreek powder
      1 tbsp black pepper powder
      2 tsp mustard powder
      2 tsp fennel powder
      1 tsp garlic powder

    I made this last night and it was absolutely delicious however it was just about enough for 1 person. If I want to make it for more do I double or triple all of the ingredients for example or just a a few?

      Hi, great to hear Adam. Thanks so much for trying. Spicier dishes don't always scale well with the spices but I think doubling would work fine although I wouldn't go higher than that.
      Remember as well it's about the heat and caramelisation. When you get too much in the pan it tends to boil things rather than caramelise
      This is what I would do for 4 servings. Just make sure all liquid is boiling hot
      4 People
      9 tablespoons vegetable oil
      2 medium onion (brown/white) - sliced
      2 green pepper (sliced)
      4 teaspoons garlic paste
      4 teaspoons ginger paste
      2 teaspoon coriander powder
      3/4 teaspoon cumin powder
      3/4 teaspoon turmeric powder
      2 tablespoons mix powder or curry powder
      3/4 teaspoon or as required chilli powder
      1 teaspoon sugar
      1.5 teaspoon salt
      3 tablespoon tomato paste (mixed with 6 tablespoons of water)
      600 millilitre water
      1 tomato cut into wedges
      15 pieces meat, vegetables, paneer or tofu
      pinch garam masala powder
      red finger chili - sliced for decoration
      fresh chopped coriander for decoration
