      Thanks , i work my pizzas on sourdough but never had the same consistency over it and your explanations are so great 😉😉😉,i understand more in english than french 😂😂

    Is it necessary to keep the dough balls in individual containers near the end? I have a tray in which I rest/prove the dough balls normally and usually directly take the dough balls from there to shape the base etc

    Great one. so how do you use the sourdough starter for your NYC recipe instead of yeast ? 20% of the flour ?

      That sounds reasonable to me if you have a fresh well fed starter that isn’t too sour.

      Hello! For sure, however I really don’t think they are near as good when they’ve thawed. I prefer to cook them and then reheat. But that’s my preference :)
