Is it necessary to keep the dough balls in individual containers near the end? I have a tray in which I rest/prove the dough balls normally and usually directly take the dough balls from there to shape the base etc
Hello! For sure, however I really don’t think they are near as good when they’ve thawed. I prefer to cook them and then reheat. But that’s my preference :)

That sounds reasonable to me if you have a fresh well fed starter that isn’t too sour.
