Japanese Faves: Shogayaki 3 with Exotic Mushrooms

- This lesson is Shogayaki 3 with Exotic Mushrooms. Shoga means ginger in Japanese and yaki means cooked or grilled. Shogayaki is usually made with thinly sliced pork loin, so it’s pork marinated in ginger, then grilled. - John Hornick
Serves 2
Preparation time: about 60 minutes, plus at least 2 hours marinating time, or preferably overnight
Ingredients
8-12 oz. pork loin, sliced about 1/4” or less
About 4 oz. mixed exotic mushrooms, like miatake, nameko, or shitake
2-3 Tb. ginger, minced
4-6 asparagus spears, cut into 3” pieces
About 2 tsp. sesame oil
Olive oil
Sea salt
Ichimi togarashi (or freshly ground pepper)
Cooked white rice or fried rice (see my Japanese Faves fried rice lessons)
