why wouldn't you put little hitch on it and then pull with a hydrostatic riding mower going .001 mph or and not have to tilt it up and down for hours like that?

Because the operation is not as smooth as you watch it here. You got rocks in your soil that kick the unit around. You need to stabilize it a lot more than this build.
