Well to be honest, Katsu Sandwiches need certain Shokupan bread, only way to make it is to buy the original japanese thing or make it yourself.

I'm pretty sure that is katsu sauce. Tonkatsu is usually paired with some.
I don’t think it’s ketchup, it’s probably some hot sauce that’s similar to sriracha.

to be fair he wasn't making a wagyu katsu sando he was just making a regular katsu sando which is why he didn't use wagyu
