    Ingredients
    200 g fatty beef mince
    The Marinade
    ½ thumb sized piece ginger
    2 spring onions
    ½ small onion, finely chopped
    pinch white pepper
    pinch of Sichuan peppercorns
    1 egg yolk
    2 tbsp water
    1 tbsp light soy sauce
    1 tsp Shaoxing rice wine
    ½ tbsp oyster sauce
    1 tsp sesame oil
    ¼ tsp salt
    The Dough
    150g plain flour / dumpling flour
    70 - 90 ml hot water
    1 tsp vegetable oil
    ¼ tsp salt

    Just keep the heat low, so the center of the meat and sides of the dough gets cooked.

    I am surprised the meat cooked inside. I wonder if it can just be fried lightly each side then finished in the oven. Then I can use less oil. Will try this veganized with mushrooms.

    Very nice
    But i think it wiuld be better if the meat is half fried before filling it then filled and the pie is fried as you did
    Because the meat seems here half done

    Can’t imagine cooking Chinese food on an electric or induction stove. Sad that California is banning gas. I hope the techniques and food don’t change too much.

      I heard that has gas stoves are better for cooking in that one has more precise control over temperature.
