@Kevin McDougall I actually like beets, but I prefer the greens to the roots. Beet greens are very tasty and nutritious, especially boiled until tendercrisp with salt and just a hint of butter The roots are best chopped up and put into something bigger where their sweetness doesn't overpower the palate. My favorite is a soup my brother used to make with beef, potatoes, beets, carrot and onion. It came out so red from the beets that we jokingly named it Vampire Stew, and it was delicious.
I always found it funny that Changelings had the ability to just do that to one of their people and never thought about actually doing it voluntarily rather than as a punishment to learn and experience life as a Solid to better understand them. Their shapeshifting ability seems like they actually end up replicating a decent amount of humanoid physiology and at the very least if they can take away shapeshifting from one of their own, they have to know enough to actually be able to make a body.
