Three Michelin Star Fish Recipe | Fish with Zucchini Flower & Saffron Nage from Eleven Madison Park

  • Today, I attempted to make three michelin star fish recipe from the famous Eleven Madison Park in New York! It's zucchini scaled fish, saffron fumet and
    zucchini blossom filled with ratatouille, my homage to the famous turbot, poached with zucchini & saffron fumet at Eleven Madison Park, prior to their decision to shift to all plant based menu.
    While I am sad I won't be able to taste chef Daniel Humm's dry aged & honey glazed duck, turbot with zucchini & saffron fumet and many many more dishes, I would still love to see how him and his team at Eleven Madison Park treat their plants to serve at a three michelin star establishment. I truly admire their decision and dedication towards their beliefs.
    I know for a fact that my attempt is nothing close to the original masterpiece that chef Daniel Humm has created, especially me having to replace couple ingredients from the original recipe. That being said, I am still very happy how it came out to be. It was truly delicious and I can only imagine how amazing the original version must be. I am happy I got to try to replicate one of their archived recipes and I look forward to trying to recreate their aged & honey glazed duck recipe in the future!

    That sauce looks absolutely lovely. The whole plate really!
    Can't wait for your dry aged duck. It's something I've wanted to do for a while, so I'm curious as to what protocol you'll use :)

    I like more the 2nd time you plate it.. the one that was used in Eleven Madison Park..
    I'm not sure why they always use white plates but dishes really do look elegant and beautiful in a white plate. hmm
