Pickled Red Onions

  • Having had a lot of requests for this on my IG, it is finally up! My 'go to' for pickled red onions.
    Ingredients:
    ⠀⠀⠀⠀
    3 red onions
    1/2 tbsp peppercorns
    1 tbsp mustard seeds
    2 tbsp coriadner seeds
    5 cloves
    3 cups / 235ml water
    2 cups / 235ml apple cider vinegar
    1.5 tsp salt
    2 tsp sugar
    ⠀⠀⠀⠀
    31 oz. / 916ml sterilised container
    ⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀
    Method:
    ⠀⠀⠀⠀
    1. Finely slice the red onions
    2. Toast the spices in a pan for 5 minutes, until fragrant.
    3. In a new pan, add vinegar, water salt and sugar. Let it dissolve. Add the spices and boil for 5 minutes.
    4. Place onions into container and pour over pickling liquid. Seal and refrigerate for 24 hrs before using.

    Go perfectly in sandwiches, salads and as garnishes. They add a lovely ‘tang’ to the dish. Can be kept for up to a month in the fridge.
