How to Make the Perfect Paella! (See Description for the HD version!)

    The chef at Palm Oasis (Gran Canaria) makes a delicious giant paella every Sunday, enough for 40 people, so I thought I´d show you how he does it.
    This version is Paella Mixta (NOT the more traditional Valencian paella!), and ingredients include pork, chicken, fish, prawns, mussels, asparagus, peas & beans. None of these ingredients are essential. There are many different version of paella - just use the ingredients you like best (or the ones you have available)! You can just use seafood if you like, or don't use any if you don't like it. You can even use rabbit or chorizo if you like. A traditional Valencian paella would not use seafood but would use chicken, rabbit and even snails. To be honest, Valencians are very proud of their traditional paella, and are a bit sniffy about the more general versions of paella.
    Wine is not essential and neither, arguably, is tomato. What I do know is that this version tastes amazing! Give it a try, it's really easy to cook as you'll see in the video. The main thing is NOT to stir once the rice has been added. If you need to add more stock, do so, but leave it unstirred as some of the flavour comes from the mixture caramelising slightly at the bottom of the pan. Don't have the heat up too high however, or you'll burn it.
    We've had some questions about the colouring/seasoning used. In Spain many people use a ready-made paella seasoning. The worst (and cheapest) sort is 'Colorante' (colouring). This is full of e-numbers and there's often a warning on the jar NOT to give it to children.
    'Paella seasoning' is a ready-made mixture usually including paprika, saffron, bay, oregano, & a little colouring. The reason colouring is used is that saffron is very expensive.
    Deliah Smith (who is not Spanish but who knows a thing or two about cooking!) uses cayenne pepper, paprika (pimenton) and saffron.
    Valencian chef Llorenç Millo uses saffron and smoked paprika as does Jamie Oliver.
    If you want to make paella regularly I'd recommend making up your own paella seasoning. And if you don't want to use colouring and can't afford much saffron then you could add a little turmeric which will add plenty of colour without overwhelming the flavour.
    Don't forget NOT to stir once the rice is added. And a big piece of lemon to be served with each portion is also very important.

    The best Paella I've ever eaten was in N Y city. It was so long ago, 1964 and on 5th Ave. I believe. I can't even put into words the taste of that dish. The same day, I had breakfast with an actor, I believe his name was Scott Brady. At the time he had a TV show named, Shotgun Slade. I was in the military at the time and he picked up my breakfast tab as well. He was a very nice person and had a party that night, at the hotel, don't recall the name and he invited myself and a friend. We were very well treated. A movie star of today would likely not do something similar for members of the armed forces. It's been a long time and I am sure he is no longer alive, but Thank You again, Scott Brady for being such a kind American.

    Of the hundreds Paella recipes I saw, I like this one. No fuss no mess, no talks, building flavours layers by layers till its reaches a superb dish. Love it

    Just made this Paella following his recipe exactly as he did it here. This is the best dish I have ever made. It is excellent!!! I used piquillos peppers, piementos, and red and green bell peppers. It turned out Amazing and the kitchen smells good too. It tastes out-of-this-world good!!!! I followed his recipe closely. Thank you Chef!! Thank you!!!

    Ok, I am a giant paella virgin!
    I have a 60cm paella pan, big charcoal BBQ, Bomba rice,squid, monk fish, prawns, mussels, beans, peppers,toms,garlic herbs etc, and 20 guests for lunch tomorrow.
    I have watched the video now it's pray for a nice sunny day and in at the deep end!

    What an interesting video. Thank you for posting it. I am anxious to give this a try at home. In watching the preparation I couldn't help but notice how similar this is to Indian/Pakistani biryani. There are many videos of the biryani on You Tube also.

    Looks spectacular. He knows the right amount of spices -- paprika, saffron, herbs, ect that makes quite a difference, and, I suspect the type of wine. Wish I were there -- my guess is he knows a lot that 3 star Michelin chefs do not. Reminds me of India and watching some chefs work who do the same thing over and over and become beyond perfection.

    we vacationed in Spain a few months ago and I learned how to make Paella. I purchased all the ingredients including that Brilliant Paella rice and it turned out fantastic. I made sure that I brought a few boxes of that rice and the Paella seasonings back home with us 😊. one thing, yes Saffron is expensive but I wouldn't skimp out of it. 😊

    Excellent, It differs from place to place, and for general knowledge, people used to take their paella (pan) to the fields and cook on the spot for their labourers. Ingredients can be rich or poor, even use the leftovers of the week such as meat fish and poultry. The chef was very good.

    Yes I like "ull" of it too! Notice that this is restaurant style cooking. He did not saute the chicken and pork, then take out and set aside etc. This is dump, stir and go and lots of rice (three kilos!). This method works very well for large pans. I have made several 23 inch paellas recently using his technique and altering ingredients to suit. Worked every time, delicious and very easy. The key is the prep. Notice that everything is prepped and measured out. Great video.

    One more tip. Most paella is made of whole chunks, drumsticks, thighs, shrimp etc. I have noticed a problem with whole pieces. American men love meat, lots of it, and perhaps rice is not very important to them. They tend to scrape and pick out all of the meat (way more than their share) and leave the rice behind! Yikes!
    By cutting up the meat and mixing it with the rice (as in this video) helps everyone share equally, and is easy to serve. Love it, and thanks for the video.
