Has anybody out there in The ether ever had something up north we call cucumbers and onions... It's where you slice up regular cucumbers and onions and you mix them and 50% white vinegar and 50% water and let them sit for a week or so you can also add like radishes it's not really a pickle but they're really good and when I was a kid everybody had a bucket of them in the refrigerator

Absolutely. My mom has been doing this for more than 50 years. Adds a tiny bit of sugar and a few other spices, takes the edge from the vinegar. Recipe has been handed down over time, so guessing its been around since at least late 1800's. Everything is made from scratch in my family. No store bought crap here.

I just did 4 quarts of pickles myself here in DFW, as God only intended us to eat cucumbers in this fashion (HA! I guess you can tell I hate cucumbers but love pickles). My recipe comes from Grandma and it's simple, but she used alum and I continue to do the same. I think most folks today have been scared away from using it as it will cause the end of the world (like using Miracle Grow in your garden, which I still do, too) , but there are three generations of us alum pickle eaters with my 87 year old father still eating them. The bread-and-butter pickles are great, too, but then they use sugar which will also bring about the end of the world.

Yay! A pickle vid. I'm into it...we are getting tons of cukes...I have done 2 batches...1st batch I used 1/8tsp of cream of tarter per jar with a cherry leaf (for tannins to make pickles crisp) & it worked! They were delish & crisp.
2nd batch is used pickle crisp & this worked great too, but if ever in a bind grab an oak leaf or grape, cherry...etc...the tannins will keep crisp as well as cream of tarter 👐💃🥒

@@BIGALTX TY! I was researching replacements for alum=aluminum which I don't want in my body....
"cream of tater is a byproduct of wine production, the residue left on the barrels....a potassium acid salt that is formed during grape fermentation"
So I am assuming it has tannins in the byproduct (cream of tarter) that makes pickles crisp up🤷♀️😊
Don't forget you can use grape or oak leaves to crisp up pickles as well as pickle crisp.

Hey Allen buy some ball pickling crystals and it will make you pickles crunchy and stay crunchy. I make 21 day sun pickles we call them Oklahoma sun pickles. Basically the same but we cook off the vinegar and turmeric and spice then set them in the sun for 21 days.

I do pickle (escabeche) onions, carrots, jalapeño peppers, cabbage and beets (some combined and some just alone) with garlic, oregano, bay leaves, black pepper, cilantro seeds, ...and salt. although the ratio that I use for water:vinegar is 600ml:400ml.

I grew those Mercury cucumbers this year too…how did you like them? I really liked the small seeds. They made us lots of good pickles too 👍🏻
Considering all the rain we got and that they nearly drowned out, yes… they did real well for us too. I have some other cucumbers in Earthboxes that are coming on soon. I will pickle them and see how the well they do. They are Sumter cukes.

I also LOVE pickles. I canned a dozen or so jars many years ago and had planned on entering them in the local fair. I put the two identical jars up in the cupboard, on the top shelf behind other things to let them set up and put the rest down lower, on the shelf above the washer and dryer and forgot about them. About a month later my teenage Son called me at work and asked me where I got the pickles, and my heart sank. I told him they weren't quite done yet, and they needed to sit another month or so, and I asked him where he found them (hopeing he'd say above the washer and dryer) but of course, he said he found them hidden on the top shelf of the dish cabinets and asked me why I'd put them there. I explained that I had to have 2 identical jars to enter in the fair competition, so that's why I hid two up there and left the others down at eye level in case he found them. He said that they were incredible, and if I had entered them I would have won, hands down.
That was my very first and only attempt to make pickles, and I guess I 'won my blue ribbon'. I do plan on doing more of them as well as other canning other produce but I just haven't yet.
*Something that I have done and taught my Son to do, (now that he's all grown up and has a Family of his own), is to make what I call cucumber pickles for the fridge.
This is how you make them. Get a large pickle jar or canning jar, get 6 or 7 or so cucumbers, wash and peel them. Then slice them the thickness you like your pickles to be and put them into the jar. Cut 2 or 3 thin rings of white onion and add to the mix (after you've filled about half the jar with cucumber slices) and then continue to fill the jar with the peeled, cucumber slices. Then when the jar is full almost up to the threads, then fill half the jar with cold water and fill the top half with white vinegar to the top. Put the lid on it and rotate it a few times to mix the vinegar and water well, then put in fridge to set-up and cool. It is best to let this set for at least a week before you open and eat. If it isn't strong (vinegary enough) for you, you can pour out alittle of the liquid and add more white vinegar to taste. You can also add a few shakes of dill to the jar if you like as well. This is what my Mom would make for the family when I was a kid, and my Son enjoyed it so much that I taught him to make them as well. (He said one time after he left my house he took a jar over with him to his girlfriends home and her Dad tried them and almost ate the entire jar!) My Son told me I would have to make him bigger jars, so the next one I made was in a half gallon jar. Hahaha.

Try to do some cauliflower , carrot mix. I buy that in the store and love it. Comes in hot and mild, I'm sure you have seen it. How about green beans or your yellow wax beans? Called Dilly Beans.

I have the Kosher Dill and the regular Dill.
I have only used the Kosher.

@@BIGALTX we didn't like the kosher. Dill tastes just like Clausen pickles. We only make refrigerator pickles.
A crawfish cooker works very well with the basket, and you don’t heat up the house.

I have pickled a few different ways and while I still stick to gma's sweet pickle recipe, I use Mrs. Wage's for everything else! (Pasta sauce to pickles and more!) This will be my 1st time using the xtra crunch pickle crisp and I am anxious to see how they turn out. I usually soak them in pickling lime for 24 hours, etc. like gma taught me but it's a rather lengthy 3 day process lol so if the crisp will make them crunchy enough that will save a bunch of time !

If you don't have pickle crisp you can put a grape leaf or an oak leaf. The tannens in them will make the pickles crisper.

I used Mrs. Wages last summer for my first time canning pickled cucumbers and okra............they turned out great......the Ball pickle crisp I used didn't work that well, but the flavor was great. I added two jalapenos, and minced garlic for just a little heat. Great videos!

I love mrs wages, i buy the spicy mix. This year im soaking in lime overnight then rinsing and doing the regular way after that. I have tried everything from grape leaves to pickle crisp and nothing works as good as pickling lime.

Peter Piper says you can pickle peppers. I say that if it grows in the garden, you can pickle it, or try pickling it at least once to see if you like it whether alone or mixed, sliced, chunked, diced, green or fully ripe. It's fun to add a "test" jar of something different with each batch if you have enough brine left over. Personally, I like "sweet" pickling over Dill though... Other than the silver and blue haired judges at the county fair, there are no "pickle cops", so my advice is to "pickle too much".

Looks easy. I've did it like this before and pickles weren't crispy. In time I threw all pickles out. I haven't used pickle crisp. Watching you I'll do this. How long will pickles last on shelf using pickle crisp? Watching 3/22/24 from South Iowa

I think it’s a quarter teaspoon. It’s on the pickle crisp jar directions.
And yes, I added it to the jar not the brine.
How did the Ms. Wages pickle crisp work for you? For us the pickles were tasty but still not crispy.
They weren’t limp, but still not what I would call “Crisp”.
After refrigeration they get a little more crisp.
How did they taste? As soon as my cucumbers gets ripe I think I’m going to use this mix

I like to soak my slices in pickling lime and ice water to give them that crunch. I stopped using Mrs Wages many years ago, I make a better mix than that, I even grew my own dill for my son's favorite pickles. If you've never had a good home made mix you won't go back to Wages or 😄👍

Alan, not trying to pick a nit because you know I love all your videos but the link for the Kosher dill mix is for refrigerator pickles and you used quick process. Now I don't know if there is a difference or even if anyone would care. I don't see why the refrigerator mix couldn't be processed but it may confuse someone. (OK, I guess I am a nitpicker-although I prefer 'detail-oriented'-but I absolutely don't mean this as a criticism)
Thanks for the video, showing how quick and easy it can be. I'll use the mixes this year as I doubt I'll have the time to gather all the stuff for the old-fashioned way. It sounds like they may even taste better than the way I usually do them anyway.
