Indian BAIGAN BHARTA is similar to this but it's way toooily and spicy for me, as it's all fried. I orefer your version which seems more healthy. Not a fan of raw onions so I'd grill the peppers and onions together with the eggplant for an overall smoky flavour. Got a few eggplants so looking for recipes on YT. I think I'll try yours. Saw another good esay one. It's a Filipino fave, after you've grilled and removed the skin (not the stem), flatten it and dip it in beaten egg, then fry it to a crisp. Looks yummmmm.

Joan darling played his secretary of his show but this one on the stand looks just like Susan Sarandon. Maybe they changed to Joan darling later?
