Chicken of the woods! Foraging & ID tips for Laetiporus cincinnatus

  • Learn how to ID and hunt for Laetiporus cincinnatus, a white-pored chicken of the woods mushroom that grows in the South and other parts of the eastern US! Like other "chicken of the woods" mushrooms in the Laetiporus genus, the white chicken mushroom is a wood rotter that produces overlapping caps with a fine porous undersurface. Laetiporus cincinnatus tastes like white meat chicken when it's in prime condition, though some people have short-lived bad reactions to them.
    Key ID features:
    1. Peachy-orange caps that overlap and form rosette-shaped clusters at the base of hardwood trees.
    2. Caps have growth zones, giving them a banded look. They typically have superbly cool vertical ridges and ripples as well, with a white rim of fertile tissue.
    3. Tender, white pores on the underside. Other chicken mushrooms, like the sulfur shelf (Laetiporus sulfureus), have bright yellow undersurfaces. Laetiporus cincinnatus' snowy to ivory-colored undersurface is one of its distinguishing features.

    Hi Anna, I helped one of my neighbors today ( up in the mountains of western NC) building a gate, and was pleased to see Huge Boletes, far too many varieties to list and I am not good enough to site them by memory. I also found some dried out Chanterelles. I was wishing for you as I went from mushroom to mushroom smiling.

    I love it when I find a white chicken. I think they are more tender than a sulphur shelf. I tried going out for some chanterelles today but got stood up. Lack of rain. ( western PA. ) Maybe next week.

    I keep a watchful eye out while out foraging in the Missouri woods. Chicken of the Woods is always a welcome discovery and I keep mental notes as to where this delicious mushroom fruits so I can hopefully return to the same spot again and again to harvest these beauties.     Just found your channel and I'm overjoyed to see your passion as well as your ability to convey accurate knowledge about fungi! You would have loved the mushroom gatherings at Breitenbush hot springs in Oregon circa 2000--tons of like-minded and equally passionate folks!

    These beauties apparently live here in Wisconsin but I haven't found one yet! Plenty of Sulfureus but I haven't been super impressed by the flavor of them. Perhaps too old but they were tender, I don't know. I love how you describe the possible discomforts associated. Too many gloss that stuff over or exaggerate the risk. Still waiting for your book!

    I am in Raleigh also and have 3 spots I visit every year for Chicken of the Woods I have one near our house I think I've gotten about 20 plus pounds off of in one mushroom

    I'm in yadkin county and I had a chicken of the woods since I moved here 2 years ago grow twice to three times a year but mine is already fruited and I was surprised to see that the fruiting in your area being that it's so hot and dry

    I've only found sulfurous here along the coast in the Wilmington NC area. I have a very reliable COW spot in coastal SC that produces every year. I only find cincinnatus in central NC. When was this video shot? I didn't think COW fruited in summer.

    Wdym by ‘shagbark’ oak? White oak? I know of shagbark hickory but not oak.

    This species did not make the teir 1 foragable mushrooms in New Hampshire as some people also get a reaction from the huronensis species growing on ...Pine 🙄 🤔🤔🍄🍄👍
