Very nice video Chris. There is an alternative if someone does not have gloves, just apply some coconut oil or little bit butter so that the fingers don't get burnt.
If you want the pepper flavor but not the heat, a great way to reduce it is by scooping the seeds out. I was also told to eliminate that white thing (sorry I do not know the name in English) that holds the seeds right on the top.side of the pepper. Adding tomatoes also reduce the heat.
So glad to finally have 2 great hot sauces!! I felt a little for the nice girl who wasn't fazed by all that heat (to cut up, blend and breathe!!) Such an enlightening episode!!
I notice, particularly about onion in the sauces, are the sauces you don't cook. Because they hold a lot of water. I can 'kind of' agree with this statement, as every hot sauce I make with onions are either cooked and simmered down thick or fermented. My question is, have you experimented with fermenting onions with peppers to use for a sauce?
Here we do use raw or scalded carrots and lemon not forgetting to add green papaya really make a good pickle in times of craving spicey food! Good job thou
Hi! Great cooking really enjoying watching. I used to ask my Caribbean friends for recipes and they'll say yes but never divulge so happy I found this site. Just one question, the lemon you used in the second pepper sauce did you peel the skin off? Thank you very much!
I'm actually going to grow a variety of hot peppers this year, this is a great way to use what I'm (hopefully) going to grow! Can you use different kinds of peppers for these, or do you recommend using specific recipes for certain peppers? I'm growing a few habaneros, a scotch bonnet, thai and korean peppers, and a few others. Love this episode, thank you!
Good pepper sauce recipe. I use a bit of paw paw fruit in mine with garlic instead of the carrot and celery. I couldn't help wincing as I watched Bonnie! Girrrrl you will not be able to put your hands near any open orifice on your body! FYAH ! Please use gloves! Lol
I watched your video on the bread for the roti, but I wanted the recipe & video for the fillings. If you would be so kind could you please do one. I live in Harlem,NYC and have to travel to Brooklyn,NYC to get a Double it's a 1hr & 45 min trip one way. As delicious as they are (and they are) I would like to learn to make them myself.
OK this may be a daft question, can you de-seed the pepper to reduce the firyness. I don't mind spicy food but my in-laws are scared stiff of even mentioning any kind of spice included in food, so is it possible to just have the flavour of the peppers rather than the heat as well ?
most certainly! remove the seeds and you can also add pineapple, canned peaces and/or orange juice to help get things mild..but add additional flavor at the same time.
Love pepper sauce, I put that sh#& on everything, btw how did Bonnie make out, I don't wear gloves either when I handle peppers and don't matter how many times I wash my hands, I always find a way to touch my eyes later and that unexpected reminder of me handling peppers earlier comes to reality.

A good pepper sauce doesn't have to be extreme, what your mouth receives your bottom pays for.

Hey Chris, is a scotch bonnet pepper the same as a "goat pepper" you hear about in the Bahamas?
I've been eating this since I was a kid, I pour it on like ketchup. =D

This might have been asked, but how long is the shelf life if jarred? TIA
How long will this preserve in the fridge?
