Pickled Carrot & Daikon
Ingredients
1 large daikon
5 large carrots
2 tables spoons kosher salt
2 tablespoons granulated sugar
[Pickling brine]
1 cup white distilled vinegar
1 cup sugar
3 cups water
2 tablespoons kosher salt
Directions:
1. Begin by washing and cutting the carrots and daikon into 2-inch long julienne strips.
2. Transfer the prepared vegetables to a mixing bowl and rinse them thoroughly under cold running water.
3. Once rinsed, drain the vegetables.
4. Sprinkle granulated sugar and kosher salt over the carrots and daikon, giving them a gentle toss to ensure even distribution. Allow the mixture to rest for 15 to 20 minutes, allowing the flavors to develop.
5. After the resting period, repeat step 3 by rinsing the carrots and daikon once again under cold water.
6. Prepare the brine by combining all the necessary ingredients in a separate bowl, stirring until everything is completely dissolved.
7. Transfer the rinsed carrots and daikon to a suitable container, followed by pouring the prepared brine over them.
8. Seal the container and store it in the refrigerator overnight, allowing the pickled flavors to infuse into the vegetables.

Watching you use the mandolin without a guard or cut proof glove nearly gave me a heart attack
That's how I sliced the tip of my thumb off
It's a perilous battle. But the scars we earn are a badge of (stupid) honor 😤.
I though the same thing.
It happened to me ,my fingers were actually shredded just like the daikon 🥲
Skill issue
I adore vienamese food! Not even Vietnamese but i can eat the food everyday and not miss a thing!
I'm half Vietnamese and my aunty also makes this. It's yummy. Had with some rice and grilled marinated pork chops.
Not Vietnamese but learning how to make all this stuff is so fun. Vietnamese cuisine is my all time favorite, I want to learn as much as I can so I can eat Vietnamese dishes every day for every meal
@@johnnyrocket1685awesome!
Vietnamese food is so fresh
This is low key one of my favorite easy things to keep in the fridge. It compliments so many dishes. I always have a batch ready to go. When I'm feeling fancy, I add a finely sliced shallot in there with a slice of ginger and one star anise. You can use the same method for pickled Thai chilis too.
In the Carolinas we add peppers and call this "chow-chow". Its considered a condiment to be eaten on top of cabbage or greens.
Sounds yum
Thank You Miss Mary ❣️Id forgotten about Chow Chow! Thank You for the memory, now I'm going to make some Chow Chow!! Bless Y'all
When my cat makes it...it's called Meow Chow...
I love chow-chow!
Thank you for this awesome delivery. I appreciate that you spoke clearly and with a smile. You left out the theatrics and gave clear and concise instructions. I could watch you all day. Also, I think I will try this. Keep up the great work.
I love the way you cut into julienne
Love this because it is even good for vegans and a great addition to salads and sandwiches!!

Yummmmmmmm, yes please 😊😊😊😊😊
So good.
Yum I can see this on a lot of things
Would I need to sanitize the jar in boiling water beforhand? Thanks!
Yummy 🥰🌹🌹🌹
Looks great, keep it up!❤
Thank you! 🫶🏼
Daikon❤
Bro, how do these Viet guys always have the perfect hairstyle as I've got good hair, the Dyson, round brush, hair serum, and pomade. And every time my old barber who moved away 😢 did my hair, I would get that level of volume, but when I do it myself, I can never properly replicate it.
I have a question, please. Would I be able to use the same brine? If I was using beats or green beans
Will it worknwit cabbage?
YUMMY
Staple in our fridge. So delicious! Often time, without daikon. Just carrot. And i cut the carrot a bit thicker.
We Also have this in the Philippines its called Achara❤❤❤
How the daikon looks or is ready to prepare in this recipe, it looks delicious.
Is diekon some kind of onion. I do apologize for my ignorance.
Its a radish
never wash veggies after chopping... first wash...towel dry and then chop...health is wealth
In Philippines, we call it 'atsara'. We usually use different veggies like semi ripe papaya, carrots, bittermelon and a lot more.
Are you a chief or just sharing your dear grand Mom recipes with us!? Anyway much love, and today is my Birthday!!!
Great skill my friends, one question why your ware a watch to cuttings day Cooking ? Is that a show or make you a better cutting?
What a 🥰 cutie ❤️😘
Is this what goes in Bahn Mi? This stuff is lit.
Yes.
Thank you I always wanted to know how to make this...I'd love to try a banh mi
My pleasure!
Please try it 😭 I was lucky enough to work in a Vietnamese restaurant for about 8 months or so, and it solidified my love of Vietnamese cuisine. I could cook and eat it every meal of every day.
Girl try it. I’m not even Vietnamese and I love the rib eye or pork ones.
What do you eat it with?
Yeah my mum house usually has it in her fridge.
Gennuine Question...why toss them in salt and sugar when you rinse them again afterward and then put them in a mix where salt and sugar already exsist?
Only rinsing with whater whould be also ok...
To make it crunchy
It takes the extra water out of the vegetables.
Hi! What kind of vinegar? And what can you use instead of the white veggie / daikon?
How much water salt and sugar. Sorry new to this so I’m trying to get it right.
Thank you.
Tap the 3 dots at top right of screen and tap on Description for the recipe.
How long does this keep for?
Can I use apple cider vinegar instead of distilled white or should I run to the store?
@The469mamapoo Either vinegar would do.
What kind of vinegar did you use?
what are the measurements???
Press the 3 vertical dots on top right corner of the screen then click description
Omg. Thank you for this tip!
how long can it be on the fridge? does it go bad?
Is there another way to pickle food ? I mean without sugar? Can I use any other sweetener?
I think real sugar actually preserves food, sweeteners wont do it the same unfortunately
How long can you keep it in the fridge?
What is the approximate shelf life?
One jar can last for a good 2 days, but ideally, you want to make just enough to eat for one day because of the freshness of the veggies.
I've eaten this after it's been sitting in the fridge for weeks, and I'm still alive so 🤷.
@@WildDanHibiki That's pretty much the answer I was looking for! Thanks!
@@patriciatoderanpressure can them, you can eat them a year from now.
Try the Indian version of this
What is it?
How long does this keep in the fridge?
Is there a recipe? I'm not sure what quantities to use
How much sugar vinegar do I put?
Can I put normal salt
Lol…7 years in VN n I never saw “kosher salt” once😂😂😂😂
Why wash off the juice after carrots and daikon were cut?
Can I use monk fruit instead of sugar?
Vietnamese uses kosher salt?
I would put the glass jar in boiling water to keep it longer in the fridge
What is Daikon?
I'm confused.. I looked at the recipe you provided, but in the video it appears you're adding far more salt & sugar - like maybe a cup - to your veggies than the 2 TBSP your recipe calls for. Which is the correct amount?
Haitian people eat this too
A lot of other Asians do too. But everyone has to attach their country to take ownership.
I wash my vegetable before i cut it ,the nutrient goes into the water when u wash off after u cut it.
He washed it because he salted it. The salt makes it pliable and ready to accept the solution. But you don't want the salt residue or it messes up the flavor. This is Pickling Technique 101.
@@swicheroo1no they're saying he washed the cut vegetables before salting them, i also thought it was weird
Measurement please, thank you
How long does it keep?
It’s holds for a very long time since it’s being pickled/fermented in that brine.
But if you need an estimate, I’d say anywhere from 6 months to a year. It all depends on how you store it as well.
The daikon:carrot ratio should be relatively 2:1 or at least 1:1 for a better taste. 😇
I always thought this had some fish sauce in it. 😊
Can you give us ingredients and measurements?
We do that with unripe papaya too.
👍🏽
Can I elect not to use sugar?
I like my pickle salty acidic rather than sweet
How long will this last in the fridge?
2-3 weeks at least
@hansendesigns : much less if you like it 😅
What are the ingredient measurements?
No boil brine water? They usually tell us but i usually do it quick way not copk water just throw in whatever veggies n brine in or add garlic onion chilly ginger veniger then use brine water as nuoc mam' taste like fish soy sauce im vegan. Thing my cabbage slices seem too hard crunchy how do i correct it by let it stay outside longer?
measurements?
Man all that sugar is going to do a lot of damage !😂
