I suggest you try Koi Pond by Daniel Solis, it's sort of a zoo game. It's satisfying in its simplicity and has some interesting and balanced game mechanics I think you'd like. Also beautiful artwork
I've only played one zoo game. It was called Wildlife. Unfortunately I was playing with my wife's family and my mother-in-law was too impatient to read the rules and we didn't play properly. However; if we had it would have been a pretty enjoyable game.
About your idea to have a number to know how many there are of each card, there's a card game by Rio Grand games called Bonanza that uses that mechanic. I'd love to hear your thoughts on the game, it's fantastic!

Careful with Muchkin. Depending on the group you play with it can be either light hearted fun or infuriating. The rules are pretty vague and needs constant house-ruling. This doesn't go well with every crowd.
