We use and love Masterbooks Language Lessons for a Living Education for our writing/grammar curriculum. It is a much gentler approach than something like IEW. Levels three-five focus on them learning to write a really good paragraph and I believe six expands on that. There is also picture studies, spelling and every fourth day reading a Bible Story with copy work.
We use beautiful feet books for history also and we go through a charter. The way we turn in samples is by having my kids write a narration on what they learned. Or I'll write down their answers to the questions from the guide and they'll copy their answers on a paper. I use copywork for handwriting practice, spelling practice, etc. They like reading their answers after they've copied them. Just thought to share in case you want to go back to a living book approach to history. Sometimes we do a craft or an art project as well. If they do a drawing or a painting, I have them write a few sentences about it.
