Sour dough is an ancient practice it doesn’t and wasn’t so technical in thousand of years ago no one had scales and they used all of their starter dough and didn’t throw away anything
According to Dr Josh Axe it's the best kind of bread to eat because it's very healthy. Fermentation is healthy. He says even people who suffer celiac can eat sourdough bread. He is a certified nutrition specialist as well as holding other degrees.
