I like it, too. I use paprika on top and pats of butter on the stuffing before I close it. Comes out super tender. I sometimes crank the oven down to 280 - 300 after about 30 minutes if it's boiling too much.

I read that Julia didn't believe in diets but she did in moderation. She must have known what she was doing because she made it to her 90s and so did her husband.

stick a meat thermometer into the stuffing. If it's over 165 degrees, no problemo.
After all of the strings that you have used why don't you just eat them and throw the chicken in the trash
I think mustard would have been much better in the sauce than curry, which would ruin it for me.
Instead of curry, you can add mayonnaise to this kind of sauce to have a thick and rich smooth sauce.
Curry sounds wonderful to me, actually. But if you don't like it, mustard would do (i don't particularly care for mustard myself)@@nonenoneonenonenone
that, or a tad of marjoram, or just a bit of crushed garlic. I'm not a fan of curry. She dumped way too much curry in there.
