Stunning looking Blue Pea Agar Agar that is quick and easy to make

    This recipe is fairly simple as you only need to make 1 layer of santan and blue pea flower extract in the agar agar mixture. When it is cooling down, the santan will slowly separate and float up, creating 2 layers as can be seen in the photos.

      Thank you very much. It's 1/2 packet of Rose brand agar agar powder. Sorry, I'm not sure how many tsp is that.

      @@ShiokmanEddie I wonder if you'd consider recipes for lemongrass agar agar, or an agar agar with gula melaka coconut on one layer and pandan on the other (like the bengawan solo kueh). Would be interesting!! 😅

      Yes I've tried making those before on a trial basis. Maybe next time when I'm more free then I'll make videos for those. As it is I've many request for other dishes and Kueh. I'll keep your request in mind. Thanks.

    I bought it (butterfly) just today, it's in powdered form, I made lavender tea and added that to it with some lemon juice, tast wonderful.

    how do u dry up the flower? sundried/dehydrator/oven? wash them before drying?

      I don't, bought them already dried. Store in the fridge in zip lock bags.

    Your recipes are great and well-explained. I bought the pea flowers especially to try out this recipe. How easy was it to remove the kueh from the mould? I am afraid to break it!

      Thank you Claire 😊 what you can do is to clear the sides all round with a thin spatula. Insert toothpicks at least 3 locations in between the sides of the agar agar and your mould, so that it will create tiny gaps at these places. These gaps will prevent the agar agar from sticking back to the mould. Overturn mould on to a plate and slowly shake until it pops out. The other way is to soak the mould in warm water for awhile and then overturn and it should slide out.

      You're welcome. Another thing to note is for the separation of the santan layer to occur is to leave the agar agar to cool long enough before chilling. This is to ensure that the santan will float thus creating the 2 layers effect. Also use bigger moulds and don't move or disturb the mould during the cooling process. Oh ya, after adding the santan to the agar agar mixture don't boil too long. Hope it will turn out well for you.

      Do you mean that once we mixed all ingredients together and boil them, we should remove from the fire and wait until it is at the room temperature before putting in the fridge?
      By the way, for how long can we keep this kueh? 1 day, 2 days?

      Yes after adding the santan, boil for a little while and then remove from flame. Then transfer to your moulds, leave it at room temperature untouched for the santan layer to slowly float up before putting in fridge. In the fridge this agar agar can be kept for at least a week if not longer. By the way it's not a kueh :-)

      I've not try whipping cream to make agar agar before. I'm not sure if you can get this separation and the taste will be different, I think.

    Hi Eddie, when we leave it to set, the separation should have occur even before we put inside the fridge ?

      Yes you should totally leave it untouched and it should slowly separate. Any movement will affect the separation. Also if the mould is small, the agar agar will set before it has time to separate. Better to use a big mould or glass bowl.

      I grew my own but they do sell online. I've come across a few sites that sells it but quite expensive. I've also bought some from Malacca at the Jonker street area. There are many shops selling them in small packets.

    What brand of coconut milk do you use since how thick or thin the coconut milk will he makes a difference in whether the coconut will float or not. Did you use a can of coconut where the coconut milk is thinner and there is a layer of harden coconut cream on top that needs to he mixed back into the liquid or did you use a box of arroy Dee coconut milk in a box?

      Most likely the santan is too concentrated. Try diluting it in your next try

    Hi Eddie, I have tried to follow all steps but ended up with only the santan layer, the mixture was not separated. Could you please advise if any steps which I have missed out? Thanks!

      Ok - 1. if you used a small jelly mould, the agar agar will set before it get a chance to separate. 2. Once you’ve scoop the agar agar mixture into the mould leave it to cool undisturbed. 3. Santan mustn’t be too thick when adding to the mixture and don’t boil too long. 4. Maybe your next try, you reduce your santan as it maybe too thick.

    How long does it take for the santan to separate and float up? My agar2 has been cooling for almost 45mins and no sign of separation!

      About an hour and you musn't move it or touch at all.

      One more thing, your mould mustn't be small because the agar will set before it got time to separate. The bigger the mould, the longer time it will need to set.

      As per recipe. You musn't disturb the jelly mould after you've poured the agar agar mixture into it. Any disturbance will prevent it from separating. Also if your moulds are small, the agar agar may set before it has time to separate.

      I'm not sure why yours didn't set. If you follow the exact amount of agar agar and water, it should set easily. Maybe I suggest to add a bit more agar agar powder and reboil it. Could be your mixture is too diluted.

      I'm afraid not. You can try with fresh milk but the taste will not be the same.

    Beautiful ! In India the leaves, flowers and roots of this plant known as Aparijita are used in Ayurvedic medicine. Not used in food.

      Santan too thick. Try diluting it.

    Just to check why the coconut milk is not separated to form a clear layer like yours?
    Why salt is added into agar agar? To balance up the taste or to separate the coconut to float on top? Can you advise?

      Salt is added to enhanced the flavour and not for separation. Many factors will prevent separation - if jelly mould is too small, agar agar will set before the santan has time to float. Santan too thick will also makes it difficult to separate. Once agar agar mixture is transferred to jelly mould, it must not be disturbed at all. Any movement will also prevent separation.

      After you poured the agar agar mixture into your mould, you must not touch it or shake it to allow it to separate. If there are any movements it will be mixed up again. Also if your mould is too small, the agar agar will set before it has time to slowly separate.
