I made Manjula's tamarind chutney many times and keep it in my fridge ready to use anytime....dahi badas, tikkis and so on. It is simply awesome!! To be on a safer side, I give it a boil or two and then cool and store.

I just get so much confidence watching you so confidently and perfectly and sweetly ofcourse making all the delecious foods...and best part at the end when you sat "my recipe is ready! and now me and my children will have it with pleaseure!" this is reminds me exactly of my mama.
They don't sell tamarind without seeds in my city and the paste is very expensive. So, I bought the only available tamarind with seeds (same package design/brand as yours), had to mash it with my hands and used gauze that I squeezed to get the pulp. I used the whole package, because about half the weight is seeds. I love your recipe. Also, I planted some seeds. They took 2 months to germinate. I love the plant (and it's leaves that close during the night, or when sprayed with water). :)
Thanks you Manjula ji for the recipe. To make tamrind paste, I put the saoked tamrind in microwave for 1 min and then in food processor and then strain it. there is less wastage.
What a cute kid! I used to buy tamarind chutney from a NY restuarant and drink it like it was a beverage it was so delicious. I am from the caribbean and we had a tamarind tree in our backyard. My grandma used to make chutneys, anchar, candies and even jam with it. I just love tamarind! Thanks for your recipe once again.

The only thing i did different, i used only half cup of sugar boiled with 1/4 cup water (simple syrup) this intensify the sweetness and less sugar is needed.... Everything else, i followed the recipe as Majula's showed....

This is just AWESOME. I was looking for a sort of sauce I had tasted when stayed in Martinique that was made with tamarind and this is so very close of what I was looking for. hi I love this recipe I am going to try it right away. I have 2 questions 1. will it taste the same if I bring it to a boil? 2. will it not spoil faster if not brought to boil, cooled and stored?
But, I need to wait for months sometimes to get Tamarind in Taiwan :( and there is no substitute for it as the taste would become diferent。 but, I love this recipie!!! Auntiji's recipies make me feel at hom and remind me of my mom !! :) I apologize for behaving as a kid but am helpless。 I ma a vegetarian and just crave 4 Indian vegeterain dishes!!

there is no substitute for roasted cumin, you can do without it but this does provides lot of flavor to chutney

@mjdriard it's called gur, it's made with evaporating the sugar-cane juice. it can be substituted for sugar, tastes really good in sweets.

Manjula- Can you substitute jaggery for part or all of the white sugar you are using. Half and half maybe?
Mexican grocery stores sell dry tamarind pods. So that's another option if you don't have an Indian or Asian grocery store in your area

you can use tamarind paste. Add the same spices little more or less will not make that much diffrent but paste dont have the same taste.
